Everything in moderation, right? These cookies are definitely a lot more decadent than I’m used sharing and enjoying, but I love a good big cookie. And I love anything cookie monster-esque. So, when I saw the original idea for these stuffed cookies, I just knew that I was going to have to do something similar and in a little bit more of a lightened up way, at least as much as I could manage anyway.
I did stuff my cookie monster cookies just a little bit differently and made a few sways to healthify them in my own way. These cookies start out with a from scratch blue chocolate chip cookie dough that is then stuffed with regular chocolate chip cookie dough AND an Oreo cookie.
That’s right, not only are these cookies HUGE they are also stuffed with more cookie dough AND cookies. If that isn’t enough, they are also topped with some cookie crumbles. Like I said, they’re decadent. These cookies are also very easily 2-3 servings. When I say HUGE, I mean the size of my hand and also quite hefty.
Some of the swaps that I made were halving the sugar for sweeteners, but if we’re being honest that’s really the only health conscious change that I made. Enjoy these. Indulge a bit.
Cookie Monster Cookies
Ingredients
- 1 C. Cold Butter, Cut into Cubes
- 1/2 C. Brown Sugar
- 1/4 C. Brown Sugar/Stevia Blend
- 1/4 C. Sugar
- 1/4 C. Natural Sweetener
- 2 Eggs
- 2 Egg Yolks
- 2 Tsp. Vanilla Extract
- Blue Gel Food Coloring
- 1 3/4 C. All-Purpose Flour
- 1 1/2 C. Cake Flour
- 2 Tsp. Cornstarch
- 1 Tsp. Baking Soda
- 1 Tsp. Baking Powder
- 3/4 Tsp. Salt
- 2 C. Semi Chocolate Chips
- 4 Oz. Refrigerated Chocolate Chip Cookie Dough
- 8 Oreos + More for Decoration
- Optional Crunchy Chocolate Chip Cookies for Decoration
Instructions
- Preheat the oven to 400 degrees F. and line two baking sheets with parchment paper or silicone baking mats; set aside.
- In a large bowl, or the base of stand mixer, beat together the 1 C. Cold Butter, 1/2 C. Brown Sugar, 1/4 C. Brown Sugar/Stevia Blend, 1/4 C. Sugar, and 1/4 C. Natural Sweetener for four minutes.
- Add in the 2 Eggs, 2 Egg Yolks, 2 Tsp. Vanilla Extract, and Blue Gel Food Coloring. Beat again until just combined.
- Reduce the speed and add in the 1 3/4 cups All-Purpose Flour, 1 1/2 C. Cake Flour, 2 Tsp. Cornstarch, 1 Tsp. Baking Soda, 1 Tsp. Baking Powder, and 3/4 Tsp. Salt until the dough starts to come together.
- Stir in the 2 C. Semi Chocolate Chips.
- Divide the dough evenly into 8 pieces onto the prepared baking sheets. Mine were about 6 Oz. each.
- Round the dough into balls and flatten them slightly, setting them far enough apart to allow room to spread.
- Divide the 4 Oz. chocolate chip cookie dough in 8 and form into disks. Set one disk in the middle of each.
- Top the chocolate chip cookie dough with one Oreo.
- Carefully push the chocolate chip cookie dough and Oreo into the center and wrap the cookie monster dough around to seal in the chocolate chip cookie dough and Oreo.
- Top with cookie crumbles for decoration if desired.
- Place in the oven to bake for 12-14 minutes or until edges are starting to brown but the center is slightly doughy.
- Remove from the oven and set aside on the baking sheets for 15 minutes to cool.
