It’s definitely that time of year where Summer is lingering on the horizon and we’ve all got to dig deep to try and push forward through the rest of the school year and into Summer break. Most years, I’m not quite ready for the hot 100 degree days and three months of blistering sunshine, but this year I am all in. I. Can’t. Wait. That being said, I still have things to do!
That’s where quick weeknight meals and easy dinner options come into play, like these Lightened Up Lazy Enchiladas! They are so easy to make and delish too. So what’s a lazy enchilada anyway? Well, there’s no tortillas involved. It’s basically a casserole that you make with tortilla chips, sauce, meat, and veggies. No rolling involved.
Just toss everything together in a baking dish, bake it up, and you’ve got dinner ready in no time at all! To lighten this dish up, I went with a lean ground turkey and reduced fat cheese. I also bulked it up with some onion. Outside of that there isn’t a whole lot else to change other than if you wanted some other kind of tortilla chips; baked, multigrain, etc.
Although I haven’t tried it, you could probably get away with making this up ahead of time and then baking it at dinner time when you’re ready to enjoy. I’d maybe suggest if you try it to wait to mix in the tortilla chips until just before baking though.
Lightened Up Lazy Enchiladas
Ingredients
- 1/2 Onion, Chopped
- 1/2 Lb. Lean Ground Turkey
- 6 Oz. Tortilla Chips
- 1/2 C. Salsa
- 16 Oz. Shredded Reduced Fat Cheddar Cheese
- 14 Oz. Enchilada Sauce
Instructions
- Lightly coat the inside of an 8x8" or 9x9" baking dish with non-stick spray and set aside.
- Place the 1/2 chopped onion into a large skillet and cook over medium-high heat until tender.
- Add in the 1/2 Lb. ground turkey and cook to brown.
- Preheat the oven to 350 degrees F. and crush the 6 Oz. tortilla chips while they are still in the bag; place in the bottom of the prepared pan.
- Top the chips with the cooked meat and onion mixture, 1/2 C. salsa, half of the cheese, and 14 Oz. enchilada sauce.
- Mix it all together and press it down into the bottom of the pan.
- Top with the remaining half of the cheese.
- Place in the oven to bake for about 45 minutes.
- Top with plain greek yogurt, diced tomatoes, pico, more salsa, avocado, green onions, or jalapeño if desired!
