Breakfast Bundt Cake
Ingredients
- 5 Whole Large Eggs
- 1/4 C. Unsweetened Almond Milk
- Salt & Pepper to Taste
- 3 C. Self-Rising Flour
- 2 1/4 C. Shredded Reduced Fat Cheddar
- 10-12 Slices Bacon
- 2 1/4 C. Unsweetened Almond Milk
- 2 Tbsp. Butter
- Green Onions
Instructions
- Preheat the oven to 425 degrees F. and lightly spray an non-stick bundt pan; set aside.
- In a medium bowl, whisk together the 5 Whole Large Eggs, 1/4 C. Unsweetened Almond Milk, and Salt & Pepper to Taste.
- Heat a medium skillet over medium heat and soft scramble the eggs; set aside to cool slightly.
- In another medium bowl, whisk together the 3 C. Self-Rising Flour with 1 C. of the Shredded Reduced Fat Cheddar and 1/2 C. of the Bacon.
- Slowly stir the 2 1/4 C. Unsweetened Almond Milk into the flour mixture only until just combined.
- Sprinkle 2 Tbsp. of the bacon and 1/4 C. of the shredded cheese into the bottom of the bundt pan.
- Scoop about 1/2 of the dough into the bundt pan.
- Sprinkle the dough with 1/2 C. of the shredded cheese, the soft scrambled eggs, and the rest of the bacon.
- Scoop the remaining dough over the bacon, eggs, and cheese.
- Place in the over to bake for about 25 minutes or until an inserted toothpick comes out clean.
- Once done, remove from the oven and allow to cool for about 10 minutes before turning out onto a serving place.
- Stir together the 2 Tbsp. Butter with Green Onions and brush over the bundt before slicing and serving to enjoy.
