This Skinny Brunch Bake is from some years back now and I thought it could use a bit of a facelift when it comes to the post and the images. This bake has been one of my family's traditions for when I have a lot of family come to stay over because it definitely can feed a crowd really well!
Over the past few years as the get-togethers have been hosted at my home for the most part, I've made sure to have a nice warm breakfast on the table the morning after our little sleep-over. I always like to make something simple, warm, wholesome and easy to do.
This breakfast or brunch bake is an all in one casserole style dish that's full of eggs, cheese, onion, meat and even some biscuits! Yes, the biscuits are baked right into the 'casserole' for an all inclusive meal-in-one.
With just about six ingredients and a few minutes of preparation you can set and forget this dish for a perfectly easy meal that's sure to satisfy and impress even the pickiest of eaters!
To lighten this tradition up, I used egg whites, fat free cheese. As you can see, mine sort of ended up layering itself in the baking process, leaving the egg on the bottom, the biscuits in the middle, and the cheese, onions and meat on the top with the green onions.
Skinny Brunch Bake
Ingredients
- 16 Oz. Tube Refrigerated Biscuit Dough
- 6 Whole Large Eggs
- 1 1/2 C. Egg Whites
- 1/2 Onion, Diced
- 5 Oz. Turkey Canadian Bacon, Diced
- 1 C. Shredded Fat Free Cheddar Cheese
- Salt & Pepper to Taste
- 2 Green Onions, Diced
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of an 8x8 or 9x9 baking dish.
- Open the biscuits according to the package and place them into the bottom of the prepared dish.
- Whisk together the 6 Whole Large Eggs, 1 1/2 C. Egg Whites, 1/2 Onion, 5 Oz. Turkey Canadian Bacon, 1 C. Shredded Fat Free Cheddar Cheese, and Salt & Pepper.
- Pour the egg mixture over the tops of the biscuits and top with most of the green onions.
- Place the dish into the oven and bake it for about 50-60 minutes.
- Remove from the oven once done and allow to cool before cutting into 9 even pieces.
- Top with a few more green onions if desired and enjoy!
- I topped mine with a drizzle of hot sauce for an extra kick.
