It’s all about ease this week as we roll into the first of the major holidays for the season. So, in the midst of my dishwashing being repaired in my very tiny kitchen, I managed to piece together these Breakfast Biscuit Cups because… tummies still need to be fed despite holidays and last minute repair work. Look guys, I’m just really hoping that I have a working dishwasher come Thanksgiving, or we all might just be using paper plates again this year. Yes, again.
So! That tells you just how simple and easy these Breakfast Biscuit Cups are to make. These have all the major breakfast components - biscuit, bacon, egg, and cheese. That’s really all you need to get through the start of your day anyway.
For being so crazy simple and easy to make, these Breakfast Biscuit Cups are pretty impressive and they’ll go pretty quickly at the breakfast table. They reheat pretty well too with just a quick zap in the microwave or reheat in a toaster oven. Honestly? They could probably even be frozen and reheated later too.
I like to top mine off with a dash of hot sauce to add just a little spicy kick!
Breakfast Biscuit Cups
Ingredients
- 16 Oz. Refrigerated Biscuit Dough
- 8 Slices Low Sodium Center Cut Bacon, Cooked
- 8 Tbsp. Reduced Fat Shredded Cheddar Cheese
- 4 Whole Large Eggs
Instructions
- Preheat the oven to 375 degrees F. and lightly coat the insides of 8 muffin tin segments with non-stick baking spray.
- Press the biscuits into the prepared muffin tin.
- Lay two strips of bacon across each pressed biscuit.
- Place 1 Tbsp. Reduced Fat Shredded Cheddar Cheese into the middle of each.
- Crack an egg into the center of each biscuit cup. Season with salt & pepper to taste.
- Place the pan into the oven to bake for 20-25 minutes or until the egg whites are set.
- Once done, remove from the oven and serve right away to enjoy!
