To say that these waffles were a hit this week would be a vast understatement. I had originally made these waffles some years ago and just this week decided that it was high time to revisit them with my new waffle maker, and I was not disappointed - and neither was my daughter. She’s been a bit of a waffle fiend lately, and being as she’s one of the most picky eaters I’ve ever known, I was a little concerned that she would turn her nose up at these. But, she didn’t!
These waffles turn out light and fluffy and perfectly soft. The batter makes quite a few waffles, even with using a full cup of batter for these with my giant Belgian waffles, I got 7 of these bad boys.
I paired my waffles with a cup of my favorite coffee and topped them off with a drizzle of chocolate sauce, a sprinkling of powdered sugar and a few more rainbow 'jimmies' style sprinkles for the perfect little birthday cake inspired breakfast!
With such few ingredients required, these waffles were super quick to whip up and were still so very full of birthday cake flavor.

Birthday Cake 'Cake Batter' Waffles
Ingredients
- 17 Oz. White or Vanilla Cake Mix (Dry)
- 6 Oz. Plain Fat Free Greek Yogurt
- 2 Egg Whites
- 1 1/3 C. Unsweetened Almond Milk
- 1 1/2 Tsp. Vanilla Extract
- 1/4 C. Colored 'Jimmies' Style Sprinkles
Instructions
- Preheat the waffle maker.
- In a large bowl mix together the 1 Vanilla or White Cake Mix (Dry), 6 Oz. Plain Fat Free Greek Yogurt, 2 Egg Whites, 1 1/3 C. Unsweetened Almond Milk, 1 1/2 Tsp. Vanilla Extract, and 1/4 C. Naturally Colored 'Jimmies' Style Sprinkles.
- Once the waffle maker is heated up scoop out the amount according to your waffle maker instructions. (Mine is a big Belgian style waffle that uses a full 1 C. of batter.)
- Close and cook for about 3 minutes or until the waffle is starting to turn brown and is cooked through.
- Repeat for the remaining batter.
- Serve right away with your choice of toppings!
