I had some sweet potatoes that were in my pantry and leftover from Christmas and pretty much knew right away what I wanted to do with them, breakfast! I know that it sounds a little outside of the box to have sweet potatoes for breakfast, but it’s not all that uncommon. The last time that I made sweet potatoes for breakfast, I stuffed them with bacon and cheese for a savory twist but today we’re going sweet!
These sweet potatoes are baked and then simply stuffed with fresh blueberries, a touch of butter, banana, and honey! I added a touch of bee pollen to mine too for an extra bit of bitter and a little more of a sweet note.
One of my favorite things about these Banana & Blueberry Breakfast Sweet Potatoes is that you can bake the potatoes up ahead of time and then warm them back up in the microwave and load them up for breakfast all week long.
I found these potatoes to be perfectly filling too. One potato was plenty to get me through lunch and beyond!

Banana & Blueberry Breakfast Sweet Potato
Ingredients
- 2 Sweet Potatoes
- 2 Tsp. Butter
- 1/4 C. Blueberries
- 1 Banana, Sliced
- 1/4 Tsp. Bee Pollen
- Drizzle Honey
Instructions
- Preheat the oven to 350 degrees F.
- Scrub the potatoes clean and pierce them all over with a fork before rolling them up in foil.
- Place them on a baking sheet and put in the oven to bake for about an hour or until cooked through.
- Once done, remove the potatoes from the oven and allow to cool enough to handle.
- Remove the potatoes from the foil and cut in half.
- Place 1 Tsp. of butter into each potato and allow it to melt.
- Top each with 2 Tbsp. of the blueberries, half of the sliced banana, 1/8 Tsp. bee pollen, and a drizzle of honey.
- Enjoy right away!
