It wasn’t too long ago that I made my take on a traditional toaster strudel. You know, the sweet version with fruit filling and icing on top. This time around, I thought I would take the savory route! Bacon, egg, and cheese is the name of the game today.
These Bacon & Egg Toaster Strudel are crazy easy to make and leaves you with 6 whole servings. It helps too that they’re perfectly delicious and can be made ahead of time. Or, you know, jus enjoy them right away - warm and fresh out of the oven.
There isn’t much to do when it comes to lightening these Bacon & Egg Toaster Strudels up. That’s because they only have a handful of ingredients used in them to begin with. I did use a low sodium center cut bacon in mine. And if you wanted to shave off even more calories, you could use scrambled egg whites or a reduced fat cheddar.
These are so easy to make that my daughter decided to help me make them. And in doing so, she got super brave and decided to try one - even though the eggs were scrambled with some pepper. GASP. Can you imagine?

• 1 (17.5 Oz.) Box Puff Pastry Sheets
• 3 Whole Large Eggs, Scrambled
• 6 Slices Low Sodium Center Cut Bacon, Cooked & Crumbled
• 1/3 C. Shredded Cheddar Cheese
• 1 Whole Large Egg
• 1 Tbsp. Water
• Salt & Pepper to Taste
Directions:
Preheat the oven to 400 degrees F. and line a baking sheet with foil, parchment paper, or a silicone baking mat; set aside.
Unroll the first sheet of puff pastry and cut into 6 equal rectangles.
Spoon 1 heaping Tbsp. of the scrambled eggs into the center of each rectangle of puff pastry, leaving at least 1/2 inch around the edges.
Divide the bacon and cheese evenly among the egg.
In another small bowl, whisk together the egg and 1 Tbsp. water.
Brush some of the egg mixture around all edges of the rectangles.
Carefully unroll the second sheet of puff pastry and cut into 6 more equal rectangles.
Place one over each of the egg covered rectangles and pinch the edges together.
Transfer each toaster strudel to the baking sheet and brush the tops with the remaining egg wash.
Put the sheet in the oven to bake for 20 minutes.
Once done, remove from the oven and allow to cool enough to handle - then enjoy right away!
