In honor of Dr. Seuss's 111th birthday being earlier this week, and with St. Patrick's Day right around the corner, I decided to make a play on Green Eggs & Ham!

St. Patrick's Day is actually one of my favorite holidays, and it also happens to be my dad's birthday. Happy Pre-Birthday, Daddy! My dad always thought it was fun to make Green Eggs & Ham for breakfast around his birthday. So, the idea for my take on Green Eggs & Ham was definitely inspired by him, even though I'm pretty sure that you makes his a whole lot differently...

What can I say? I have a four year old, and one thing that I've always got plenty of is Goldfish snacks! I think I have a pantry full of nearly every flavor that's offered. Some sweet. Some savory. All delicious. I'm always trying to come up with fun and playful things to do with the tasty little snacks that we all know and love. Today, I'm thinking way outside the box (and the bag) though.

With spring fast approaching I knew that I wanted to create something light, sweet, rather guilt-free, and easy enough that it could be done while chasing around the kiddos or even make use of some helping little hands. This rich and creamy Skinny Peanut Butter Cheesecake was the perfect solution! I'm sure you're wondering by now... why I'm talking about a cheesecake rather than some sort of trail mix. Well, the answer is simple. The Goldfish pretzels are what makes up the crust of this decadent beauty!...

Cauliflower & Hominy Smash

This cauliflower hominy smash is a perfect lower carb substitution for potatoes. In fact, I would say that I enjoy this smash just as much as mashed potatoes, if not more. The texture of the two vegetables, along with the milk and a touch of butter leave this side dish tasting very close to a cheesy smashed potato with hardly any of the guilt!

Not that potatoes are a bad thing at all. They have their place in my heart too.

You get a nice heaping half cup of this smash for only about 72 calories and 13 grams carbs, and trust me... you won't miss their potato counter part at all. What's even better is that they are gluten free and clean!...
