During hard times, sometimes you just need some good old-fashioned comfort food. I mean… this soup isn’t really old-fashioned, but Chicken Cordon Bleu is an older dish. Today I decided to give Chicken Cordon Bleu a bit of a twist and turned it into the soup. Yep, that’s right… everything you love about Chicken Cordon Bleu in a pot of soup. Right down to the dijon!…

Well, all of us girls made it through camping and toobing this weekend. Three of us managed to put an 8 person tent up in all of 15 minutes. I guess the 100 degree heat and blazing Texas sun is one of the best motivators there is. Even being home and in the air conditioned house… I’m still craving cold foods.
These cute little Cobb Skewers have been my cure-all today. They’re cold, crisp, and a great way to enjoy a cobb salad as an appetizer or snack. They’re easy to put together and look pretty impressive. It’s a more ‘fancy-pants’ way to serve a salad as an appetizer anyway…

I’m going camping this weekend with a group of 5 of my lady cousins and my mother. Shenanigans are afoot. It was only natural that I sort of assumed the roll of being in charge of the snacks and food. And while I’m not generally big on the idea of camping, I have done it a handful of times in my life and I’m more than happy to do it again with these girls.
Plus, there will be plenty of family time and wine around.
Since a few of us are going to start the campout a day early, I decided that I should probably pack something light for lunch on the day we’re arriving. These ‘campwiches’ are the perfect way to pack sandwiches for any picnic or camp out…

Ugh… Back-to-school is coming up which is definitely a bittersweet time of year for me. I love having my mini-me around during the summer to plan and do all the fun things together. It’s been a good summer so far. Light and easy, just like this Kid-Friendly Zucchini Sushi!
Unlike traditional sushi, this is completely a kid centric style. You won’t find any raw seafood here. Nope! Just meat, cheese, carrots, and a zucchini shell. These little Kid-Friendly Zucchini Sushi bites are perfect for lunch boxes and finger-food snack or lunch plates…

Alright, well this isn’t -exactly a recipe, but more of a ‘how-to’ sort of thing. So, feel free to create your sandwich with whatever meats and cheeses your kids enjoy. Mine? She’s all about turkey, ham, and on occasion now, cheese too! Since we’re sort of in the midst of a ‘under the sea’ sort of themed week of summer, and we’re not seafood eaters, I thought I’d create a cute little sandwich.
Crab-free.
As it turns out, this sweet little guy would be great for any ocean, sea, or water themed party too. Thinking back, he probably would have fit right into my daughter’s ‘pirates and mermaid’ birthday a few years back now…

Now that the holidays are coming to a close for the year, I know that we’ve all got our fair share of leftover turkey and/or ham in our freezers. This is one of my FAVORITE times of year for this VERY reason. And considering there was a little bit of a communication failure over Christmas Eve and Christmas dinner, I’ve ended up with a BUNCH of leftovers.
You don’t see me complaining about that though. I love to make leftover rewind recipes, especially with leftover holiday meats. They always make for a super favorable, easy, and amazing second recipe. So what’s the first thing that comes to mind with leftovers? Casseroles? Soups? For me, it’s quiche!…
