I'm so excited for this Football season and Walmart is my go-to store for all things Football! Game day grub has to be one of my all time favorite styles of food. It could be because it's always served more 'family style' and left as perfectly bites sized, snack worthy eats and treats. Or it could be because game day means the end of summer and the beginning of fall. I'm ready for the cooler weather. Bring it on!

After a bit of a whirl wind trip to Dallas and back to Austin. And currently with a house full of two very energetic 7 year olds, momma needs some greens. How else am I going to keep up with my daughter and my nephew? With the influx of summer heat and all the madness and chaos around me right now, I figured there was no better time than now for this cool crisp veggie loaded green sandwich!
Of course, this isn't the most 'kid friendly' sandwich; unless you lucked out and have the least picky eater on the planet. So this is for the mommas, the papas, and any other parental/guardian unit that's in need of a way to power through the rest of the day. The kiddos around here opted for turkey and cheese. But, me? With a fridge full of greens that were on the way out and some special vegetarian tacos on the plan for dinner tonight, I decided I wanted to try something a little daring and different with making an avocado based pesto.
I mean, what goes better with tacos other than avocado? Nothing.
This pesto is basically a cross better a traditional pesto and a guacamole. You've got avocado and cilantro in there along with greens, garlic and some cheese. The use of the avocado means that this pesto is, you guessed it, oil free! Plus, the additions of all that green goodness bulks up the avocado so you get a whole lot of flavor for few calories...
Read MoreSo, this is what I've been up to pretty much each morning this week. I've made these waffles three times now, adjusting the recipe and tweaking it to get it to where I wanted it to be. The first time I made them as a test run, they turned out beautifully. But, the second time I made them - they were a huge flop.
Yes, even I make mistakes in the kitchen!
That could have been mostly my fault though. Honestly, my heart wasn't in it that morning and my mind was elsewhere and focused on other things going on in my life. I'm pretty sure in looking back that I left something out at some point and ended up with a waffle iron full of raw inedible goop. Whoops!
This was my third attempt with these waffles after a few final changes and a more careful eye for my measuring and accounting for each ingredient...

I have tried matcha since my favorite tea room here dusts it over their fabulous brownies, but outside of that - no. I've had my fair share of green tea, but matcha is different. Since I haven't tried it before, but have heard good things... I decided to do a little research.
At the end of my research, I ended up buying myself a package of the green stuff.
Matcha is made by using specially shade-grown green tea that's then ground down into a find green powder. It's supposed to be effective in improving mental focus with it's higher amounts of theanine. The theanine and caffeine together help to give a boot of energy without causing the crash that comes with the caffeine in coffee. The antioxidants are what I'm after though!...
