Swedish Meatball Pasta Casserole
Ingredients
- 3/4 C. Plain Panko Bread Crumbs
- 2 Tbsp. Butter
- 1/3 C. Yellow Onion, Finely Chopped
- 1Tsp. Salt
- 1/4 Tsp. Pepper
- 1/4 Tsp. Ground Allspice
- 1/8 Tsp. Nutmeg
- 2 Cloves of Garlic, Minced
- 1/3 C. Unsweetened Almond Milk
- 1 Eggs
- 1 Lb. Extra Lean Ground Beef
- 1 C. Small Shell Pasta
- 3 Tbsp. Butter
- 3 1/2 Tbsp. All-Purpose Flour
- 2 C. Reduced Sodium Beef Broth
- 1/4 C. Water
- 1 1/2 Tsp. Worcestershire
- 1 1/2 Tsp. Salt
- 1/4 Tsp. Black Pepper
- 1 1/2 Tbsp. Fresh Parsley, Finely Chopped
- 1/4 C. Heavy Cream
Instructions
- Place the 3/4 C. Plain Panko Bread Crumbs into a large bowl, set aside.
- In a medium skillet over medium heat, melt the 2 Tbsp. Butter. Add in the 1/3 C. Yellow Onion, 1Tsp. Salt, 1/4 Tsp. Pepper, 1/4 Tsp. Ground Allspice, and 1/8 Tsp. Nutmeg; cook for about 5 minutes.
- Add in the 2 Cloves of Garlic and cook for another couple of minutes.
- Sir in the 1/3 C. Milk and stir everything together. Bring it to a simmer.
- Once the onion mixture has come to a summer, pour it into the large bowl with the panko. The mixture will be very thick. Set the bowl aside to cool.
- When cooled, add in the 1 Eggs and the 1 Lb. Extra Lean Ground Beef; stir until well combined.
- Preheat the oven to 375 degrees F. and line a baking sheet with non-stick spray. Also give an 8x8" or 9x9" baking dish a spritz of the non-stick spray; set aside.
- Scoop out into 3 Tbsp. amounts and shape into balls; set onto the prepared baking sheet. (You should get a good 15 meatballs.)
- Once all the meatballs are rolled, place the baking sheet into the oven and bake for 30 minutes or until cooked through.
- While the meatballs are cooking, cook the pasta according to package directions, then drain and transfer to the prepared baking dish.
- Once the meatballs are done, remove from the oven and nestle into the pasta.
- In a medium skillet over medium heat, melt the 3 Tbsp. Butter.
- Whisk in the 3 1/2 Tbsp. All-Purpose Flour and continue stirring constantly for a minute or two.
- Stir in the 2 C. Reduced Sodium Beef Broth, 1/4 C. Water, 1 1/2 Tsp. Worcestershire, 1 1/2 Tsp. Salt, and 1/4 Tsp. Black Pepper. Bring it to a simmer.
- Reduce heat to medium-low and add in the 1 1/2 Tbsp. Fresh Parsley and 1/4 C. Heavy Cream. Stir everything together and continue to cook until it thickens, about 10 minutes.
- Pour the sauce over the meatballs and pasta.
- Transfer to the oven and bake for 20-30 minutes.
