I’ll be real honest, it’s been a pretty rough week for me. My mom had surgery and I’ve been down and out with almost a full week of some sort of strange migraine or headache of some sort. So until I’m able to get a few things resolved, it’s all about the quick and easy things for dinner just like these Giant Meatballs!
These Giant Meatballs are just that. Giant Meatballs. I equate them to something similar to individual mini meatloaves since they’re mixed with basically all the same things as a meatloaf would be. The only difference is they’re…Giant Meatballs! They’re even topped off with ketchup just like my favorite meatloaves.
I served my Giant Meatballs with a simple side salad with ranch dressing and called it done. I lightened the meatballs up by using a low sodium stuffing mix, reduced fat cheese, light ranch, and of course lean ground beef. All in all these Giant Meatballs turned out great and the leftovers make for a pretty good meatball sub sandwich.
If you want to take these a step further, you could always use a lean ground turkey in place of the beef to save even more calories!
Giant Meatballs
Ingredients
- 6 Oz. Reduced Sodium Chicken Stuffing Mix
- 1/2 C. Water
- 1 Whole Large Egg
- 1/4 C. Light Ranch Dressing
- 1 Lb. Extra Lean Ground Beef
- 1 C. Reduced Fat Shredded Cheddar
- 1/3 C. Sugar-Free Ketchup
Instructions
- Preheat the oven to 375 degrees. F. and line a baking sheet with non-stick foil or a silicone baking mat; set aside.
- In a large bowl, mix together the 6 Oz. stuffing mix with 1/2 C. water, 1 egg, 1/4 C. ranch dressing, and some salt and pepper.
- Add in the 1 Lb. ground beef and 1 C. shredded cheddar and stir until well mixed.
- Divide the meat mixture evenly into 8 pieces and roll each into a ball.
- Place the meatballs onto the prepared baking sheet.
- Top each with the 1/3 C. ketchup divided evenly.
- Place in the oven to bake for 30-45 minutes or until the internal temperature reaches 160 degrees F.
- Once done, remove from the oven and enjoy right away!
