Waldorf Salad
Ingredients
- 1 Granny Smith Apple, Diced
- 1 1/2 Tsp. Sugar
- 1 Tsp. Lemon Juice
- 1/2 C. Diced Celery
- 1/2 C. Red Seedless Grapes, Halved
- 1/4 C. Chopped Walnuts or Pecans
- 1/4 C. Whipping Cream
- 2 Tbsp. Light Mayonnaise
- 1/2 Tsp. Salt
Instructions
- Place the 1 Granny Smith Apple, 1 1/2 Tsp. Sugar, and 1 Tsp. Lemon Juice into a large bowl and toss to coat.
- Add in the 1/2 C. Diced Celery 1/2 C. Red Seedless Grapes, and 1/4 C. Chopped Walnuts or Pecans.
- In another bowl, or the base of a stand mixer, whip the 1/4 C. Whipping Cream until stiff peaks form.
- Fold in the 2 Tbsp. Light Mayonnaise and 1/2 Tsp. Salt.
- Add the cream and mayo mixture to the fruit and veggies.
- Stir until just combined.
- Cover and chill in the fridge for one hour or overnight.
- Enjoy as it is or over lettuce.
