Everyone is all into banana bread right now. And I’m over here like… normal banana bread can be boring. Let’s jazz it up a bit with something extra special. Peanut butter and chocolate. Hell. Yes. This Peanut Butter Cup Banana Bread is about ad decadent seeming as banana bread can come. The batter is made with a touch of peanut butter and then mini peanut butter cups are mixed in for added amazingness.
The batter itself is lightened up by way of plenty of mashed banana and some greek yogurt too. There’s also no actual sugar used in this bread. It’s made with natural sweeteners and blends. The end result is a light, fluffy, rich and delicious breakfast bite that is sure to impress.
Being as I wanted this bread to be on the more decadent side of things, I decided to leave it in nice thick slices to take the place as a main part of a meal, and not so much as a side piece or snack.
This bread, unlike a lot of baked things out there, only uses up one bowl. Which means it’s pretty easy to make while also being super easy for clean up! It’s a great way to get the kiddos in the kitchen as well. Just be sure you note that the flour used here is ‘self-rising’ flour. Not all-purpose!

• 1/3 C. Creamy Peanut Butter
• 1/4 C. Softened Butter
• 1 Tsp. Vanilla Extract
• 1/3 C. Natural Sweetener
• 1/3 C. Brown Sugar/Natural Sweetener Blend
• 2 Whole Large Eggs
• 1 1/2 C. Self-Rising Flour
• 1/4 C. Plain Fat-Free Greek Yogurt
• 2 Medium Ripe Bananas
• 3/4 C. Mini Peanut Butter Cups
Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x5” loaf pan with non-stick baking spray; set aside.
Place the 1/3 C. peanut butter, 1/4 C. butter, and 1 Tsp. vanilla in the base of a stand mixer and beat on high for about 2 minutes or until light and fluffy.
Add in the 1/3 C. natural sweetener and1/3 C. brown sugar blend and continue to beat for another 2-3 minutes.
Beat in the 2 eggs one at a time, mixing for a good 30 seconds in between each addition.
Reduce the speed to low and alternate adding in the 1 1/2 C. self-rising flour and the 1/2 C. greek yogurt.
Fold in the 2 mashed bananas and 3/4 C. mini peanut butter cups.
Pour the mixture out into the prepared baking pan and place in the oven to bake for 35 minutes.
Cover with a foil tent and continue to bake for another 10-15 minutes or until an inserted toothpick comes out clean.
Once done, remove from the oven and allow to cool for about 3 minutes before slicing into 8 pieces to enjoy!
