My favorite thing about this peach bread is that it is one of those things that is pretty versatile when it comes to being enjoyed any time of day as a snack or part of a full on meal. If you wanted to add a bit more warmth to it, you could always toss in some ground cinnamon and a dash of nutmeg or cloves, especially as we roll into the end of summer and over towards fall.
I served mine differently each time I enjoyed it. Sometimes with fresh fruit and berries, and other times with a pat of butter and some nuts.
Peach Bread
Ingredients
- 1 C. Peaches
- 1/2 C. Butter, Room Temperature
- 1/2 C. Plain Fat Free Greek Yogurt, Room Temperature
- 1/4 C. Sugar
- 1/4 C. Natural Sweetener
- 2 Whole Large Eggs, Room Temperature
- 1 1/2 C. Flour
- 1 Tsp. Vanilla
- 1 Tsp. Baking Soda
- 1/2 Tsp. Salt
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x5" loaf pan with non-stick baking spray; set aside.
- In the base of a stand mixer fitted with the whisk or paddle attachment, beat together the 1 C. Peaches, 1/2 C. Butter, Room Temperature, 1/2 C. Plain Fat Free Greek Yogurt, 1/4 C. Sugar, 1/4 C. Natural Sweetener, and 2 Whole Large Eggs until well combined.
- Add in the 1 1/2 C. Flour, 1 Tsp. Vanilla, 1 Tsp. Baking Soda, and 1/2 Tsp. Salt and stir until just combined.
- Transfer the mixture to the prepared baking pan and place in the oven to bake for 50-55 minutes or until golden brown and cooked through and an inserted toothpick comes out clean.
- Once done, remove from the oven and set aside on a wire rack to cool for about 15 minutes before turning out onto the wire rack to continue cooling completely.
- Slice and serve to enjoy!
