For being loaded up with all the PBJ favorites, this banana bread is made better-for-you in the best of ways! All of the sugar has been subbed out for natural sweetener, and half of the oil was swapped for an unsweetened apple sauce. Don’t worry though! Even with those minor adjustments, this bread turns out a-mazing!
This bread is great for breakfast or brunch. I paired mine with some fresh berries and a dab of butter. All said and done, each slice of this bread comes in at under 300 calories, and for something that seems so decadent? That’s pretty great.

• 2 C. Flour
• 1 1/2 Tsp. Baking Powder
• 1/2 Tsp. Baking Soda
• 1/2 Tsp. Salt
• 2 Whole Large Eggs
• 1 1/2 C. Mashed Banana
• 1/2 C. Brown Sugar/Sweetener Blend
• 1/2 C. Creamy Peanut Butter
• 1/4 C. Unsweetened Applesauce
• 1/4 C. Vegetable Oil
• 1/2 C. Peanuts
• 1/2 C. Strawberry Preserves
Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x5” loaf pan with non-stick baking spray.
Whisk together the 2 C. flour, 1 1/2 Tsp. baking powder, 1/2 Tsp. baking soda, and 1/2 Tsp. salt together in a medium bowl.
In the base of a stand mixer, beat together the 2 eggs, 1 1/2 C. bananas, 1/2 C. brown sugar blend, 1/2 C. peanut butter, 1/4 C. applesauce, and 1/4 C. oil.
Add the dry ingredients to the wet and stir until just combined.
Fold in the 1/2 C. peanuts.
Pour half of the batter into the prepared loaf pan.
Top with 1/4 C. of the preserves.
Layer with the remaining half of the batter, followed by the remaining 1/4 C. of the preserves.
Use a butter knife to swirl the jam with the batter.
Place in the oven to bake for 55-60 minutes or until an inserted toothpick comes out clean.
Once done, allow to cool completely before slicing into 12 pieces to enjoy!
