I don’t know. I just like to shake things up sometimes by putting two or three things together that I enjoy and hoping that it turns out right. Today? It’s a monte cristo sandwich and a breakfast bake or casserole. Yep. And guess what? It’s pretty damn tasty if I do say so myself. I’ll tell you another thing, after this past week, I deserved a little somethin’ something’ special.
This Monte Cristo Breakfast Casserole takes the cake. Like literally. It’s a monte cristo in the form of a better-for-you ‘strata’ or bake. Eggs. Cheese. Ham. Bread. Dijon. And you add a dab of raspberry preserves at the end and it’s done. And not depending fried or battered. Just good. Tasty. Breakfast.
My body needs this. My soul needs this. I’ve been walking 5+ miles a day for over a year. I’ve pushed a family through a divorce. Through a pandemic. Through cancer. Through a life altering car crash. Through a snowmageddon like Texas hasn’t seen before. Through life. Through death. Through it all and in JUST a year. I’m exhausted and I need a casserole. Not just any casserole. This casserole.
So here you have it, folks. THE casserole. The one that has rejuvenated my heart and soul today. Thank you Monte Cristo Breakfast Casserole. You did your part. You taste delicious and I think I love you.
Monte Cristo Breakfast Casserole
Ingredients
- 4 Whole Large Eggs
- 1 1/2 C. Fat Free Half & Half
- 1 1/2 Tsp. Dijon Mustard
- Pinch of Nutmeg
- Salt & Pepper to Taste
- 6 C. Stale Cubed French Bread
- 9 Oz. Ham
- 1 1/2 C. Shredded Swiss Cheese
Instructions
- Preheat the oven to 350 degrees F. and lightly coat the inside of an 8x8" or 9x9" baking dish with non-stick spray; set aside.
- In a large bowl, whisk together the 4 eggs, 1 1/2 C. half & half, 1 1/2 Tsp. dijon, nutmeg and salt & pepper to taste.
- Stir in the 6 C. bread to coat evenly.
- Fold in the 9 Oz. ham 1 1/2 C. of the swiss cheese.
- Pour the mixture out into the prepared baking dish.
- Place in the oven to bake for about 40 minutes or until the edges are browning and the cheese has melted.
- Once done, remove from the oven and allow to cool for a few minutes before slicing and serving to enjoy with a side of raspberry preserves!
