I was able to cook more than 4 lbs. of sweet potatoes in no time at all, days ahead of when I needed them! This means that I can make my Yummy Yam Casserole on my own schedule and in my own time. (Don’t worry, we’ll get to the Yam Casserole another day.)
Seriously, these potatoes come out so soft and tender the skins almost want to come right off. Which makes them perfect for sweet potato casseroles or even for loading up with your favorite toppings. No matter how you use them, this is by far the most easy way I’ve come across for making and baking sweet potatoes.

Directions:
Wash the potatoes and pierce them all over with a fork.
Place 1 1/2 C. water in the base of the Instant Pot.
Add the trivet to the bottom of the Instant Pot and place the sweet potatoes on the trivet.
Secure the lid, set the steam valve to 'sealed' and cook on Manual High Pressure for 12 minutes (for 1-2 lbs.), 18 minutes (for 2-3 lbs.), and 25 minutes (for 3-4+ lbs.)
Once done, allow the pressure to drop naturally before carefully removing the lid. Use, serve, and enjoy your fake-baked sweet potatoes right away or store in the fridge for up to 4 days.
