With the Holidays on our heels, we could all use a good, easy, simple recipe to have on hand as an appetizer. Let’s face it, sometimes the family gets hungry before the main meal is done, and these Goat Cheese & Pomegranate Tartlets are just that.
Small bite sized mini tarts that are filled with goat cheese and honey before being baked and topped off with crushed rosemary and fresh pomegranate seeds. They’re a little sweet, a little savory, and lots of good flavor. The richness of the goat cheese is cut with the bright pop of pomegranate for a seasonal treat everyone is sure to enjoy.
These tartlets work great as a warm appetizer that people can enjoy ahead of a main holiday meal. They’re small popable bites that won’t full you up ahead of dinner. They also work really well as a side to dinner. I served mine with some pan seared chicken, brown rice, and steamed broccoli.
No matter how you enjoy them, they’re sure to be a hit. You can also make them ahead of time and then finish them off in the oven as a hot appetizer, or serve them cold!

• 12 Phyllo Dough Shells
• 4 Oz. Goat Cheese
• 1 Tbsp. Honey
• 1/2 Tsp. Crushed Rosemary
• 2 Tbsp. Pomegranate Seeds
Directions:
Preheat the oven to 325 degrees F. and line a baking sheet with parchment or a silicone baking mat.
Set the phyllo dough shells out on the prepared baking pan and set aside.
In a medium bowl, mix together the 4 Oz. goat cheese and 1 Tbsp. honey until well blended.
Scoop about 1 1/2 Tsp. of the goat cheese mixture into the tartlet shells.
Place in the oven to bake for about 12 minutes.
Once done, remove from the oven and sprinkle evenly with the crushed rosemary.
Top the tartlets off with the 2 Tbsp. pomegranate seeds divided evenly.
Enjoy right away!
