Cookies are in season right now, and these Skinny Hot Cocoa Cookies are where it’s at! Their a cocoa flavored chocolate cookie base that’s loaded up with plenty of white chocolate, semi-sweet chocolate, and YES even marshmallows. It’s basically like eating a mug of hot cocoa… if you eat them warm and fresh out of the oven especially!
Even with the naughty bits that are in here, these cookies are sill just over 100 calories each. And what’s better, is that they are actually pretty easy to make! Sometimes cookies can be overly complicated and involved. Not these baddies.

• 1/2 C. Sugar
• 1/2 C. Natural Sweetener
• 1/3 C. Brown Sugar
• 3 Tbsp. Brown Sugar/Sweetener Blend
• 2 Whole Large Eggs
• 1 Tsp. Vanilla Extract
• 3 1/4 C. All-Purpose Flour
• 8 Tbsp. Hot Cocoa Mix
• 2 Tbsp. Cocoa Powder
• 1 Tsp. Salt
• 1 1/4 Tsp. Baking Soda
• 1 C. White Chocolate Chips
• 1 C. Semi-Sweet Chocolate Chips
• 2 C. Mini Marshmallows
Directions:
Preheat the oven to 350 degrees F. and line a couple of baking sheets with parchment or silicone baking mats; set aside.
In a large bowl, beat together the 1/2 C. sugar, 1/2 C. sweetener, 1/3 C. brown sugar, and 3 Tbsp. brown sugar/sweetener blend until light and fluffy.
Add in the 2 eggs and 1 Tsp. vanilla extract and continue to beat until well combined.
In another separate large bowl, whisk the 3 1/4 C. flour, 8 Tbsp. cocoa mix, 2 Tbsp. cocoa powder, 1 Tsp. salt, and 1 1/4 Tsp. baking soda together.
Slowly add the dry ingredients to the wet until it is all combined.
Fold in 3/4 C. of the white chocolate chips and 3/4 C. of the semi-sweet chocolate chips; reserving the remaining 1/4 of each of the chocolate chips for later.
Spoon the dough out onto the prepared baking sheets in 1” rounded scoops and place in the oven to bake for about 7-8 minutes.
Remove from the oven briefly and press a few marsh mallows and a couple more chocolate chips into the tops of each cookie.
Place the baking sheets back into the oven to bake for another 3-4 minutes or until the marshmallows have started melting and/or browning.
Remove from the oven once done and allow to cool slightly before transferring to a wire rack to continue cooling.
Once cooled enough to handle, enjoy!
