Alright, alright… so… monkey bread has been an obsession of mine lately. I admit it! I can’t help it. There’s just something about that warm fluffy bread that’s baked together with a bunch of ‘naughty’ bits. Of course, this monkey bread is a bit different. It’s savory instead of sweet. Bacon, egg, and cheese… to be sure!
That’s right. Monkey bread that has bacon, eggs, and cheese baked RIGHT into it! This fun little breakfast bite is perfect for a crowd or a brunch time spread. Mostly because… who doesn’t love bacon and eggs?!
This has to be one of the most fun ways to eat breakfast. Popable little bites that have all you know and love about breakfast together. I kept this lightened up by using a light butter, reduced-fat cheese, light biscuit dough, and of course subbed in some egg whites.
All good stuff. Delicious stuff.
Serve this up along side some fresh fruit and you’ll be good to go! Like I said, it served a crowd, and you can always fancy it up with chives and drizzled cheddar cheese sauce as garnish. But, to be honest, it’s really unneeded!
If somehow you end up with leftovers. Never fear! Simply cover and store the monkey bread in the fridge and reheat with a quick pop in the microwave to enjoy again later.

• 1 (16 Oz.) Can Reduced Fat Refrigerated Biscuit Dough
• 4 Tbsp. Light Butter, Melted
• 3 Whole Large Eggs, Cooked Scrambled
• 6 Whole Large Egg Whites, Cooked Scrambled
• 8 Slices Low Sodium Center Cut Bacon,Cooked & Chopped
• 1 C. Reduced Fat Shredded Cheese
• 2 Tbsp. Chopped Chives
Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of a bundt pan with non-stick baking spray; set aside.
Cut the biscuits into 6-8 pieces and toss them into a gallon ziplock with the 4 Tbsp. melted butter.
Layer the biscuit pieces, 3 cooked eggs, 6 cooked egg whites, 8 slices cooked bacon, 1 C. cheese, and 2 Tbsp. chives into the bunt pan.
Place the pan into the oven to bake for about 30 minutes, or until the biscuit dough is cooked through and browning on the top.
Once done, remove the pan from the oven and allow to cool for about 10 minutes before over-turning onto a serving dish.
Sprinkle with more chives or a little cheese sauce for garnish if desired.
Enjoy right away!
