What can I say? I’m inspired by a lot of things in life. Growing up through the 90’s meant a lot of watching The Simpsons. And anytime you watch the show, there’s like a scene with Homer eating a donut. The Simpson donuts are a classic vanilla donut with pink frosting. So, I took one of my old favorite recipes and reworked it into this riff on Skinny 'Homer Simpson' Donuts!
Needless to say, the house smelled heavenly this morning. It’s been a good bit of time since I baked any donuts. So my little girl was tickled pink when she got her heart-shaped donut fix this morning. Even though I don’t think that she fully appreciated that they were ‘Simpson’ donuts.
These donuts are lightened up by using a whole wheat white flour, greek yogurt, and natural sweeteners. I used a bright neon pink gel food coloring for the frosting, but if you aren’t going for ‘The Simpson's’ look, you could really use any color here… or no color at all!
And of course, I had to use my heart shaped donut pan here. Mostly because it’s the only one that I have so far, but also because it’s just too cute not to use it. That being said, any donut pan should work out just the same - no matter the shape.
Not too shabby for a Saturday morning nod to an old cartoon classic. And the fact that they’re well under 150 calories each just makes these donuts all the more irresistible. Especially when you compare that to a traditional donut shop donut!
So, feel free to enjoy one… or two - guilt-free!

Servings: 6 • Serving Size: 1 Donut • Calories: 127 • Fat: 3 g • Saturated Fat: 2 g • Carb: 419 g • Fiber: 1 g • Protein: 5 g • Sugar: 1 g • Sodium: 97 mg
Donuts:
• 1 C. Whole Wheat White Flour
• 1/4 C. Natural Sweetener
• 1 Tsp. Baking Powder
• 1 Whole Large Egg
• 1/4 C. Plain Fat-Free Greek Yogurt
• 1/4 C. Fat-Free Milk
• 1 1/2 Tbsp. Light Butter, Softened
• 1 Tsp. Vanilla Extract
Pink Icing:
• 1/2 C. Confectioners' Sugar Substitute
• 1/2-1 Tbsp. Fat-Free Milk
• 1/2 Tsp. Vanilla Extract
• Pink Food Coloring
Directions:
Preheat the oven to 325 degrees F. and lightly spray a donut pan with non-stick baking spray.
Combine the 1 C. flour, 1/4 C. sweetener, and 1 Tsp. baking powder into a large bowl until well blended. Set aside.
In a medium bowl, whisk together the remaining 1 egg, 1/4 C. greek yogurt, 1/4 C. milk, 1 1/2 Tbsp. light butter, and 1 Tsp. vanilla extract.
Add the wet ingredients in with the dry and combine just until everything is fully incorporated.
Spoon or pipe the dough into the prepared donut pan, dividing evenly among the sections.
I put my dough into a gallon ziplock, sealed it, cut the end off and used that to pipe into my pan.
Place the pan into the oven and bake for 10-15 minutes.
The donuts will not turn golden brown, but should 'spring back' to the touch when done.
While the donuts are baking, whisk together the 1/2 C. confectioners sugar, 1/2 Tbsp. milk, 1/2 Tsp. vanilla extract, and pink food coloring in a small bowl and set aside.
Once done, remove the donuts from the oven and remove to a wire rack to cool slightly
Dip the donuts face-down into the glaze, top with sprinkles, and set back on the wire rack until set. Maybe 5 minutes or so.
Enjoy! One or... two.
