Sometimes you just have to shake dessert up. This holiday season would be the great time to start a new tradition. Instead of the usual pies and cookies, why not try out this Gingerbread Cobbler! This Gingerbread Cobbler is very similar to my Whole Wheat Pumpkin Cobbler, but more in line with Christmas or New Years than Thanksgiving!
Cobbler just seems like the perfect winter dessert. It’s warm, gooey, and filling too. My mom seems to think that this cobbler is like those old fashioned pudding cakes where you layer the batter on the bottom of the pan and pour hot liquid on top to bake. While baking, the cake bubbles up to the top and the gooey pudding cobbler goodness is on the bottom.
I served mine hot with a dusting of powdered sugar, but a nice vanilla ice cream would be great with this cobbler too. Trust me when I say that no matter how you top it off, this cobbler goes quickly! There’s just enough sweet and just enough spice to really get that gingerbread flavor.

• 1 C. Flour
• 1/2 C. Sugar, Divided
• 3/4 C. Brown Sugar/Sweetener Blend, Divided
• 1 Tbsp. Ground Ginger
• 1 1/2 Tsp. Baking Powder
• 1 Tsp. Ground Cinnamon
• 1/4 Tsp. Sea Salt
• 1/4 Tsp. Nutmeg
• 1/4 Tsp. Ground Cloves
• 1/4 C. Molasses
• 1/2 C. Unsweetened Almond Milk (Or any milk.)
• 1/4 C. Melted Salted Butter
• 1 1/2 C. VERY Hot Water
Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x9" or 8x8" oven safe baking dish with non-stick baking spray and set aside.
In a medium bowl, whisk together the 1 C. Tbsp. flour, 1/4 C. of the sugar, 1/4 C. of the brown sugar/sweetener, 1 Tbsp. ground ginger, 1 1/2 Tsp. baking powder, 1 Tsp. cinnamon, 1/4 Tsp. salt, 1/4 Tsp. nutmeg, and 1/4 Tsp. cloves.
In a small bowl, whisk together the 1/4 C. molasses, 1/2 C. milk, 1/4 C. butter, and 1/4 C. brown sugar blend.
Add the wet ingredients to the dry ingredients and stir until just combined.
Transfer the mixture to the thick dough prepared baking dish.
In another small bowl, mix together the remaining 1/4 C. sugar and 1/4 C. sweetener.
Sprinkle the sugar mixture over the dough evenly.
Pour 1 1/2 C. VERY hot water over it all and place the dish into the oven WITHOUT stirring anything. Bake for about 40 minutes OR until the center of the cobbler is set.
Once done, remove from the oven and allow to cool slightly for about 5 minutes before dividing evenly and serving!
