These cookies are infused with coffee in two ways and loaded up with chocolate chunks. Making them great for snacking, dessert, or even enjoying with your morning cup of joe.
These Coffee Chocolate Chunk Cookies are soft chocolate chip cookies. It’s a light and fluffy cookie that’s more cake-like. Not much crisp. Not very dense. One of my favorite parts though? It’s a great excuse to eat cookies in the morning.
The coffee flavor here is just that, a touch of coffee flavor. It’s not overpowering at all. It’s subtle and just enough to give the hint of coffee. If you like a strong coffee flavor, simply add more coffee to the cookie dough!
I like to serve these with some fresh fruits, berries, and a nice hot fresh cup of coffee.

• 1 C. Butter
• 1/2 C. Brown Sugar/Stevia Blend
• 1/2 C. Natural Sweetener
• 1 Whole Large Egg
• 1 Egg Yolk
• 2 Tsp. Coffee Grounds
• 2 Tsp. Brewed Coffee
• 1 Tsp. Vanilla Extract
• 2 C. All-Purpose Flour
• 1/2 C. Whole Wheat White Flour
• 1 Tsp. Baking Powder
• 1/2 Tsp. Baking Soda
• 1/4 Tsp. Salt
• 1/2 C. Semi-Sweet Chocolate Chunks
Directions:
Place the 1 C. butter, 1/2 C. brown sugar blend, and 1/2 C. sweetener into the base of a stand mixer and beat together for a minute or two on medium speed.
Scrape down the sides and add in the 1 egg and 1 egg yolk and continue to beat for another minute or two.
Beat in the 2 Tsp. coffee grounds, 2 Tsp. brewed coffee, and 1 Tsp. vanilla.
Reduce the speed to low and add in the 2 C. flour, 1/2 C. wheat flour, 1 Tsp. baking powder, 1/2 Tsp. baking soda, and 1/4 Tsp. salt.
Mix together until just incorporated.
Fold in the 1 1/2 C. chocolate chunks.
Transfer the dough to clear plastic wrap and place in the fridge to chill for at least 1 hour and up to overnight.
Once the dough is chilled, preheat the oven to 350 degrees F. and line a couple of baking sheets with parchment paper or silicone baking sheets. Lightly coat them with non-stick baking spray.
Scoop the dough out into 2 Tbsp. balls and place onto the prepared baking sheets about 2” apart.
Place in the oven and bake for about 15 minutes or until the edges start browning.
Once done, remove from the oven and allow to cool slightly before transferring to the wired racks to cool completely.
