For a lot of us, Summer has come (or will come) early this year. Especially if you have kiddos! While Summer is officially a couple of months off still, I thought I’d get things heading in that direction. I mean… it’s already in the high 80’s here on most days. It’s been perfect weather for grilling!
With it being warm out, I wanted to make use of the grill, but also have something nice, cool, and refreshing on the plate. That’s where this Tex-Mex Pico De Gallo Grilled Chicken comes into play. I got my hands on some Texas Pete® Original Hot Sauce and knew it would make the perfect marinated for chicken.

Chicken:
• 1 Lb. Boneless Skinless Chicken Breast
• 1/4 C. Texas Pete® Original Hot Sauce
• 2 Tbsp. Texas Pete® Dust Dry Seasoning
Bruschetta:
• 3/4 Lb. Tomatoes
• 1/2 Medium White Onion
• 1/2 Jalapeño
• 1/2 Fresh Lime, Juiced
• 2 Tbsp. Fresh Cilantro
• 2 Tbsp. Green Onion
• Salt & Pepper to Taste
• 4 Tbsp. Queso Fresco
Directions:
The day before you plan on grilling, place the 1 Lb. chicken into a sealable bag with 1/4 C. Texas Pete® Original Hot Sauce and 2 Tbsp. Texas Pete® Dust Dry Seasoning.
Give it a good toss around and place it in the fridge to marinate overnight.
When you’re ready to grill, remove the chicken from the bag and place on the grill to cook through completely.
While the chicken is grilling, stir together the 1 1/2 Lb. tomato, 1onion, 1 jalapeño, 1 lime juice, 1/4 C. cilantro, 1/4 C. green onion, and salt & pepper to taste.
Once the chicken has reached 165 degrees F. remove from the heat to divide evenly and plate.
Top each with the Tex-Mex bruschetta divided evenly as well, and 1 Tbsp. quest fresco.
Enjoy right away!
