These tasty oat bites are made with just a handful of ingredients and a few minutes of time. They’re perfectly sweet and just filling enough to be part of a meal or a snack! They taste just a little bit like the classic Girl Scout cookies known as Caramel Delights.
Chocolate Peanut Butter Oatmeal Bites
Ingredients
- 3/4 C. Semi-Sweet Chocolate Chips
- 2 Tsp. Coconut Oil
- 1 1/2 C. Quick Oats
- 1 1/2 Tsp. Maple Syrup
- 1/3 C. Vanilla Almond Butter, Melted
- 1-2 Tbsp. Water, As Needed
- 1/3 C. Creamy Peanut Butter, Melted
- 1/3 C. Vanilla Almond Butter, Melted
- 1 C. Unsweetened Shredded Coconut
Instructions
- Line a cupcake tin with paper or silicone liners.
- Place the 3/4 C. Semi-Sweet Chocolate Chips and 2 Tsp. Coconut Oil into a microwave safe bowl and microwave at 20 second intervals until melted; stir in between.
- Place about 1 Tsp. of the chocolate into the bottom of each liner.
- In another bowl, mix together the 1 1/2 C. Quick Oats, 1 1/2 Tsp. Maple Syrup, and 1/3 C. Vanilla Almond Butter. If it's too dry, add in some water and stir until desired consistency is reached.
- Place 2 Tbsp. of the oat mixture into the cupcake liners and press down slightly.
- Transfer the tin to the freezer for a few minutes.
- In another bowl, stir together the 1/3 C. Creamy Peanut Butter, 1/3 C. Vanilla Almond Butter, and 1 C. Unsweetened Shredded Coconut.
- Once the chocolate and oats have set in the freezer, remove the tin and scoop 1 Tbsp. of the coconut mixture into each cupcake liner. Drizzle with any remaining chocolate if desired.
- Place the tin back into the freezer for at least 30 more minutes until it's all firmed up.
- When it's all set, enjoy right away!
- Store leftovers in the fridge to enjoy through the week.
