There isn’t much to do to lighten this up outside of some low fat cottage cheese. The rest of ingredients are pretty simple and standard. You get a good mixture of cool and creamy, bright, and bold flavors here with this Caprese Toast. I chose a sourdough bread that didn’t come pre-sliced because I wanted to be able to get a good thick slice that could hold all the toppings!
This toast makes a great meal no matter what time of day it is. Breakfast, brunch, lunch, or even a light dinner option.
Caprese Toast
Ingredients
- 1 Slice Sourdough Bread
- 1/4 C. Low Fat Cottage Cheese
- 5-6 Cherry/Grape Tomatoes, Halved
- 2-3 Fresh Basil Leaves, Sliced
- Drizzle Balsamic Reduction
Instructions
- Toast the 1 Slice Sourdough Bread.
- Top it with 1/4 C. Low Fat Cottage Cheese spread evenly.
- Add the 5-6 Cherry/Grape Tomatoes and 2-3 Fresh Basil Leaves over the Low Fat Cottage Cheese.
- Drizzle with the Balsamic Reduction and enjoy right away!
