Sometimes, a girl just needs some caramel corn.
Way back in the day there was this amazing microwavable caramel corn that was my most favorite movie night treat in all the world. And… then it disappeared off store shelves to never be seen again. What’s a girl to do? Well, apparently it’s not enjoy warm gooey caramel popcorn for years and years until they stumble across the notion that they can just make it themself.
This caramel corn takes it a step further. It’s able to be homemade with all your own ingredients and with little time and effort. And let me just tell you, this stuff is delicious!
I love that this Caramel Popcorn can be made ahead of time too. With the caramel coating you can make it a few hours ahead of time and then enjoy it when you’re ready to. And don’t forget to toss the popped corn in the salt since the sweet and the salty aspect that goes along with caramel corn is important!
This Caramel Popcorn doesn’t get crunchy. It stays somewhere between crunchy and soft. If you’re looking for crunchy caramel popcorn, stay tuned!
Caramel Popcorn (Instant Pot)
Ingredients
- 1 C. Popping Corn Kernels
- 4 Tbsp. Coconut Oil
- 1 Tsp. Salt
- 4 Tbsp. Butter
- 1/2 C. Milk
- 1/2 C. Sugar
Instructions
- Set the Instant Pot to saute and add the coconut oil to the base.
- Once the oil has melted, add in the 1 C. popping corn and stir to coat the kernels evenly.
- Keep stirring until the kernels start to pop.
- Secure the lid and allow to cook until you no longer hear the popping.
- Remove the popcorn from the base of the pressure cooker and toss with the 1 Tsp. salt.
- Place a sauce pan over medium heat and add the 1/2 C. sugar and 3 Tsp. water. DON'T STIR. Allow the sugar to melt.
- Once the sugar looks light brown, add in the 4 Tbsp. butter and slowly whisk in the 1/2 C. milk.
- Cook for about 5 minutes and then set aside to cool and thicken.
- Once the caramel has thickened, pour over popcorn and stir to coat fully.
