Skinny Brown Bag Taco Popcorn (On the Cob or Not!)

I've got to admit, I'm not exactly a huge fan of popcorn. Ugh! I know. I really wish I was. But, I do have a lot of popcorn fans in my family. ... Okay, so pretty much everyone else but me is a huge over-the-top popcorn lover.

As the season has it, I happened to get popping corn on the cob in my local produce box the past couple of weeks. I've had it sitting with my other dry produce on the counter for a while, looking at it and waiting. I was trying to decide what exactly I wanted to do with it when popped. Personally, if I'm going to eat popcorn, I like for it to have a really fun and amazing flavor. I find that it helps get me more interested in it.

Yes, I'm the one always wanting cheddar, ranch, or any other seasoning on my popcorn.

Now, my mom will tell you that the only way to eat popcorn is with it doused in butter. Yes. Literally... doused. I've watched this woman at the movie theater, pump after pump after pump of butter. Eek! I don't know about you, but I like to know exactly what's in what I'm eating. And I have no idea what the put in those butter pumps! Artificial such-and-such I'm guessing?

Despite what she says, the last time that I made my brown bag popcorn she devoured it; even after turning her nose up at the fact that I didn't have it swimming in butter. Oh, ye of little faith! Maybe one of these days she'll learn to trust me... but, probably not.

So, after a week of this popping corn sitting there, I finally decided on a good and proper flavor for it... Taco!

This taco popcorn is de{light}ful and so full of amazingly bold flavor that you won't miss the added butter or fat - I promise.

I have four more cobs of popping corn left and I know that at least one of them will be done in taco style again, just because it tasted so great. In fact, I may have to take some of it over to my mom this weekend to let her taste test my newest popcorn creation.

What's better is that this popcorn is virtually guilt-free! With only 50 calories in a serving and only ingredients that you know and can pronounce, straight from your own kitchen in just a few short minutes!

The Skinny:
Servings: 3 • Size: About 1 Cup • Calories: 50 • Fat: 1.7 g • Carb: 7 g • Fiber: 1 g • Protein: 0.7 g • Sugar: 0.7 g • Sodium: 554.2 mg

Ingredients:
1 Popping Corn on the Cob or 1/4 C. Kernels
1 Tbsp. Taco Seasoning
1/2 Tsp. Salt

Directions:

Place the popcorn into a brown bag and roll to fold the end closed a few times.

Place the brown bag into the microwave. I use the 'popcorn' setting on my microwave, but really you won't want to leave popcorn unattended. Microwave for about 3 minutes or until the popping has slowed to 1-2 every few seconds.

Remove the bag from the microwave carefully.

If you have a cob of popping corn it will be very hot!

Once slightly cooled, open the bag and toss in the seasoning; shake to coat popcorn evenly.

I leave the cob in there with the rest because I like to pick at the popped pieces on it.
