I have pretty much been in love with my waffle maker ever since I got it, if you couldn’t tell. I’ve been making all sorts of waffles. Sweet ones, savory ones, some with mixes, others from scratch. I’ve got to say though that these Blueberry Waffles take the cake. They’re made all in one bowl with very real and very simple ingredients that you probably already have on hand.
As I’ve been going through these different kinds of waffles, I’ve been playing around with different amounts and ingredients. These Blueberry Waffles end up being a bit lighter in both color and texture. And the blueberries in there add some texture and just a bit of chew.
My waffle maker makes BIG giant Belgian style waffles. Seriously, half of one is definitely enough for a serving. I like to make a batch of these ahead of time and then store them in the fridge for a quick and easy reheat and eat through the week or even on the weekend too.
I topped mine off with some blueberry syrup and some fresh blueberries too.
Blueberry Waffles
Ingredients
- 2 C. Flour
- 2 Tbsp. Sugar
- 1 Tbsp. Baking Powder
- 1 Tsp. Salt
- 1 1/2 C. Unsweetened Almond Milk, Room Temperature
- 6 Tbsp. Butter, Room Temperature
- 2 Whole Large Eggs
- 2 Tsp. Vanilla Extract
- 4 Oz. Fresh Blueberries
Instructions
- Preheat the waffle iron and whisk together the 2 C. Flour, 2 Tbsp. Sugar, 1 Tbsp. Baking Powder, and 1 Tsp. Salt until well blended.
- Stir in the 1 1/2 C. Unsweetened Almond Milk, 6 Tbsp. Butter, 2 Whole Large Eggs, and 2 Tsp. Vanilla Extract just until combined.
- Fold in the 4 Oz. Fresh Blueberries.
- Cook waffles accordingly with the preheated waffle iron. (Mine uses one full cup of batter for a very large Belgian waffle.)
- Once done, remove the waffle from the heat and serve right away.
- Rinse and repeat with all of the batter. (I got 4 full waffles.)
