Depending on your butter, jam or jelly, these donuts can even be vegan with no other swaps. The black velvet cacao gives them this really dark deep rich flavor that pairs really well with the sweet and tart flavor that comes along with raspberries. I decided to toss mine in some sugar just because my kiddo wanted some to be left unfilled. But if you fill yours with the raspberry jelly, you really don’t need the sugar on the out side.
Black Velvet Raspberry Jelly Filled Donuts
Ingredients
- 1 C. Warm Water
- 1/4 C. Sugar
- 2 1/4 Tsp. Active Dry Instant Yeast
- 1 C. Pumpkin Puree
- 2 Tsp. Vanilla Extract
- 4 C. Bread Flour
- 1/3 C. Black Velvet Cacao
- 1 1/2 Tsp. Salt
- 1/4 C. Butter
- 1 C. Raspberry Jam/Preserves
Instructions
- Place the 1 C. Warm Water, 1/4 C. Sugar, and 2 1/4 Tsp. Active Dry Instant Yeast into the base of a stand mixer fitted with the paddle attachment. Combine and let them sit for 5 minutes until the mixture has become foamy.
- Set the mixer to low and add in the 1 C. Pumpkin Puree and 2 Tsp. Vanilla Extract until well combined.
- Add in 2 C. of the Bread Flour, 1/3 C. Black Velvet Cacao, and 1 1/2 Tsp. Salt.
- Swap the paddle attachment for the hook and add in another 1 C. of the Bread Flour. Mix on low speed.
- Add in the 1/4 C. Butter in 1 Tbsp. amounts, stirring in between each addition.
- Finally, add in the last 1 of the Bread Flour.
- Allow the hook to knead the dough for 8 minutes or until the dough is tacky but not sticking to the sides of the bowl or your hands. Add more flour if needed to reach the desired consistency.
- Once done, turn the mixer off and remove the dough to form into a ball.
- Spray the inside of the bowl with non-stick spray and place the ball of dough into the prepared bowl. Cover and sit in a warm dry place for 30 minutes, or until doubled in size.
- Once risen, turn the dough out onto a lightly floured surface. Roll it out to 1/2" thickness and cut out doughnuts using a 3 1/2" round cutter.
- Set them on a baking sheet and cover loosely with a tea towel. Place the tray in a warm dry place to rise once again for another 15-20 minutes.
- Once risen the second time, place 4-5 donuts into the basket of the air fryer at a time, spraying the tops lightly with non-stick spray.
- Air fry at 350 degrees for 5 minutes, flip, and then continue to air fry for another 3 minutes.
- Once done, toss immediately in sugar if desired and place on a wire rack to cool completely.
- When all donuts are cooked and cooled entirely, place the raspberry jam or preserves into a piping bag and fill the donuts up!
- Enjoy right away or store in a cool dry place for up to 3 days.
