These Whole Wheat Bacon Strip Pancakes couldn't be easier to make. In fact, it's even a breakfast that you can make ahead and have ready to go on the morning of Father's Day. Even if you don't make them ahead, it's a fairly quick and easy meal to make!
One of my favorite things about this recipe is that it's so versatile! If the man in your life loves something spicy, pick out a Wright Brand Bacon with a kick! Got a favorite pancake mix? • 8 Strips of Wright Brand Naturally Smoked Hickory Bacon
• 1 Batch Skinny Whole Wheat Buttermilk Pancake Batter
• Optional: Syrup of choice for dipping!
Directions:
Cook up the Wright Brand Naturally Smoked Hickory Bacon via the method of choice; microwave, stove, or even baked in the oven! I pan cooked mine today to save my bacon grease for another cause. Whip up your pancake batter accordingly. Set a large skillet over a medium heat and lightly coat it with non-stick cooking spray. When the pan is warmed up, working in twos if you can, scoop not quite 1/4 C. of the batter out in a long 'strip' like shape, followed by another. Place a strip of the cooked Wright Brand Naturally Smoked Hickory Bacon into each strip of batter, pressing the bacon in slightly. Top each with almost another 1/4 C. of the batter to cover the Wright Brand Naturally Smoked Hickory Bacon. Allow each to cook until browned on the underside, then carefully flip using a spatula and grace. Continue to cook until the second side is browned and the batter is cooked through. Once done, remove to a warmed plate and serve right away. Rinse and repeat with the remaining batter and Wright Brand Naturally Smoked Hickory Bacon!

I got my Wright Brand Naturally Smoked Hickory Bacon at my local Walmart in the refrigerated meat section. I was also lucky enough to find some Wright Brand Limited Edition Double Smoked Bacon!
Want to make these ahead of time? Store them in an airtight container in the fridge for 3-5 days. Reheat via the microwave for a quick and easy breakfast!
You could also pre-cook the Wright Brand Bacon and make the pancake batter the night before and store separately in the fridge to cook up quickly the next morning.
