It’s been a weird year, and it looks as if it will continue to be a weird year through to the very end. Even with all the craziness that’s going on in the world, it keeps turning and the seasons keep changing. As we loop back around into Fall, one of my favorite times of year, I’m more than excited to start using seasonal flavors like pumpkin and apple!
For me, it’s not quite time to break out the pumpkins, so I decided to start off on the lighter end with apples! This Apple Cider Bundt Cake is fairly easy to make and bakes up beautifully in no time at all. It’s loaded with apple goodness and the warm spices of apple cider, making it perfect for Fall.
This cake is as easy as mix dry ingredients, mix wet ingredients, combine the two and bake! Yep. It’s that easy peasy. You end up with a dairy free and vegetarian cake that’s great for breakfast, brunch, or even dessert. The texture of it is more on par with a pound cake. It’s dense, heavy, and super moist.
I didn’t find that mind needed anything to top it off, but something as simple as a dusting of cinnamon sugar or even apple butter would be great options!

• 2 C. All-Purpose Flour
• 1 C. Whole Wheat White Flour
• 1 1/2 Tsp. Baking Powder
• 1 1/2 Tsp. Ground Cinnamon
• 3/4 Tsp. Salt
• 1/2 Tsp. Baking Soda
• 1/4 Tsp. Ground Allspice
• 1/4 Tsp. Ground Nutmeg
• 1/4 Tsp. Ground Ginger
• 1/4 Tsp. Ground Cloves
• 1 C. Turbanino/Raw Sugar
• 1 C. Apple Cider
• 3/4 C. Natural Sweetener
• 3/4 C. Extra Virgin Olive Oil
• 3/4 C. Unsweetened Applesauce
• 3 Whole Large Eggs
• 2 Tsp. Vanilla Extract
Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of a large bundt pan with non-stick baking spray; set aside.
In a large bowl, whisk together the 2 C. flour, 1 C. whole wheat flour, 1 1/2 Tsp. baking powder, 1 1/2 Tsp. ground cinnamon, 3/4 Tsp. salt, 1/2 Tsp. baking soda, 1/4 Tsp. allspice, 1/4 Tsp. nutmeg, 1/4 Tsp. ginger, and 1/4 Tsp. cloves.
In a separate medium bowl, mix together the 1 C. raw sugar, 1 C. apple cider, 3/4 C. sweetener, 3/4 C. oil, 3/4 C. applesauce, 3 eggs, and 2 Tsp. vanilla.
Add the wet ingredients into the dry and mix until just combined.
Transfer the batter into the prepared bundt pan and place int he oven to bake for 45-55 minutes or until an inserted toothpick comes out clean.
Once done, remove from the oven and allow to cool for at least 20 minutes before turning out into a serving plate to cut into 12 slices.
Enjoy right away or store in a cool dry place for 3-5 days.
