It’s the end of Summer and it’s H.O.T. HOT. I think the heat of the Summer has hit just about everyone this year. It’s been a doozy. That being said, I’m in kitchen cool down mode and trying to use my stove and oven as little as humanly possibly. So, that means it’s time to bust out the air fryer and the pressure cooker more! These are super easy to make and require very few ingredients. Plus, they only take a few minutes to cook up in the air fryer.
They come out perfectly crisp and cheesy and ready for dipping into your favorite pizza sauce. These are great all on their own as a snack or appetizer, but they’re also good on their own as a sub in for pizza night when served along with a side salad!
To lighten these up, I swapped in a fat free mozzarella, turkey pepperoni, and of course my favorite low carb whole wheat tortillas. I had thoughts of using corn tortillas, but they frustrate me with breaking and cracking so I didn’t even give them the chance this time.
These are definitely a fun take on pizza themed noms that are great as a quick grab-and-go finger food. They would also be really good come tail gating season!
Air Fryer Pizza Taquitos
Ingredients
- 8 Low Carb Whole Wheat Tortillas
- 32 Slices Turkey Pepperoni
- 1 C. Shredded Fat Free Mozzarella Cheese
- 1 C. Pizza Sauce
Instructions
- Lightly coat the inside of the air fryer basket with non-stick spray.
- Lay out the tortillas flat.
- Line each with 4 Slices Turkey Pepperoni, and 2 Tbsp. Shredded Fat Free Mozzarella Cheese.
- Roll them up tightly.
- Place them into the basket of the air fryer and set it to 375.
- Lightly coat the tortillas with non-stick spray, and some grated parmesan if desired.
- Cook for 4 minutes then flip over and cook for another 4 minutes.
- Once done, remove from the basket and serve right away to enjoy!
