Oh man, it’s been a whirlwind of a few days. That’s always how the end of Summer is when we start to get into back-to-school though. And this year is no different. Especially because my kiddo is going to a new school this year on their own choosing to do so. So after the chaos of the last few days, it was nice to get to have some time this morning to make some breakfast.
After making my Blooming Buffalo Chicken Quesadillas, I decided that I should try the same idea with breakfast instead. So here you have this Blooming Breakfast Quesadilla Ring! It’s a fun and easy way to make breakfast quesadillas for the whole family!
Since this is made with very few ingredients, there isn’t much here you can do to make it better-for-you. I did swap out regular old flour tortillas for a whole wheat low carb option which when baked has crunchy edges and soft middles, which is just the way I like it. But, you could always try corn tortillas or any other that you have a preference for.
As for the bacon? I used low sodium center cut bacon leftovers that I’d cooked up to use on a soup the other day. Reduced fat cheese is always the way to go here too. Other than that? Standard as breakfast can go!
Blooming Breakfast Quesadilla Ring
Ingredients
- 8 Whole Wheat Low Carb Tortillas
- 4 Whole Large Eggs + 4 Egg Whites, Scrambled
- 1 C. Shredded Reduced Fat Cheddar Cheese
- 1/2 C. Chopped Bacon
- 1/4 C. Fresh Pico
- Optional: Salsa for dipping!
Instructions
- Preheat the oven to 375 degrees F. and cover a round baking sheet with foil; give it a light spritz of non-stick cooking spray and set aside.
- Cut the 8 tortillas in half.
- Scoop about 1 Tbsp. of the eggs, 1 Tbsp. shredded cheese, 1/2 Tbsp. bacon, and 1/2 Tbsp. pico into each tortilla half and roll up into a cone shape.
- Place the cone on the prepared baking sheet; rinse and repeat with the remaining tortilla halves to form your ring!
- Transfer the baking sheet to the oven to bake for 15-20 minutes.
- Once done, remove from the oven and enjoy right away with salsa for dipping!
