This tasty breakfast burrito has been my staple breakfast for a week now so I just had to share it. Usually when I make breakfast burritos the tortilla can end up a bit soggy or wet with all the good stuff I pile into it - namely the fresh pico and cheese. I recently decided to try and put it in the air fryer once it’s all together so that it could, in theory, end up with a slightly firmer outside and an even more gooey cheesy inside. And that’s exactly what I ended up with.
This Air Fryer Breakfast Burrito is as loaded as they come. Bacon, eggs, cheese, pico, jalapeño - oh my! I lightened it up by going with a super low calorie whole wheat and flax tortilla and was anything other than disappointed. I also used pre cooked and crumbled bacon so that I could use less bacon but still get some in every bite.
Another thing I did was to use a reduced fat American cheese - because when it comes to breakfast burritos I love to have that melty cheese threshold. I also swapped in an egg white for a whole egg and piled on the fresh pico to give me a little heat and some much needed freshness to what would otherwise be a rich dish.
I served mine with fresh fruit and some salsa on the side and it has been one of the best things to get my day going. It fills me up all the way up until lunch time which is exactly what a breakfast should do!
Air Fryer Breakfast Burrito
Ingredients
- Large Flour Tortilla Wrap (80 Cal.)
- 1 Whole Large Egg
- 1 Egg White
- 1 Tbsp. Cooked & Crumbled Bacon
- 1 Slice Reduced Fat American Cheese
- 2 Tbsp. Fresh Pico
- Pickled Jalapeño Slices
Instructions
- Lightly coat the inside of a small skillet with non-stick spray. Add in the 1 Whole Large Egg and 1 Egg White to cook to scramble over a medium heat.
- Once done, season with salt and pepper to taste and transfer the egg to the Large Flour Tortilla Wrap.
- Top the egg with 1 Tbsp. Chopped Bacon, 1 Slice Reduced Fat American Cheese, 2 Tbsp. Fresh Pico, and some Pickled Jalapeño Slices if desired.
- Roll up the burrito.
- Lightly coat the inside of air fryer basket with non-stick spray and place the burrito into the basket seam side down.
- Cook at 350 for 5 minutes.
- Once done, remove the burrito from the air fryer and enjoy right away!
