Dinner truly doesn’t get more simple or easy than this Baked Cheesy BBQ Chicken. With just a handful of ingredients you can have the main part of dinner done and ready to go. It’s basic. Simple. Easy. And cheesy! To start this easy dinner off, you mix up some BBQ sauce with a little extra garlic goodness.
After that you marinate, if you have time, and then bake it until it’s almost done. It’s then topped off with cheese, red onion, and some pickled jalapeños to give just a little kick! I lightened this up by using a reduced fat cheese, but other than that there really isn’t much else to do since there’s so few ingredients.
I served mine with some sautéed green beans and Salt & Vinegar Fingerling Potatoes for a well rounded and complete meal, but this chicken would also be good with a side salad or even as PART of a nice dinner salad.
Feel free to use your favorite BBQ sauce here or even make your own. I went with some that I needed to use up out of my fridge, but whatever you like will work here.
Baked Cheesy BBQ Chicken
Ingredients
- 1 Lb. Chicken Breast
- 1/2 C. BBQ Sauce
- 1/4 Tsp. Onion Powder
- 1/2 C. Reduced Fat Shredded Cheddar
- 1/4 Red Onion, Sliced Thin
- 2 Tbsp. Pickled Jalapeño
Instructions
- Cut the chicken breast in half and preheat the oven to 375 degrees F.
- Lightly coat the inside of a baking dish with non-stuck spray.
- Stir the 1/2 C. BBQ Sauce and 1/4 Tsp. Onion Powder together in the bottom of the baking dish.
- Place the chicken into the sauce and spoon some over the top.
- (You can let marinate for 30 minutes to an hour if desired.)
- Transfer the dish to the oven to cook for about 20 minutes.
- Remove the chicken from the oven and top each piece of chicken with 1/4 C. Reduced Fat Shredded Cheddar, half of the Red Onion, and 1 Tbsp. Pickled Jalapeño.
- Place it back into the oven to continue to bake for another 10 minutes or until the chicken is cooked through and the cheese is melted.
- Remove from the oven and enjoy right away!
