This Monte Cristo Strata is a delectable breakfast casserole that combines the classic flavors of a Monte Cristo sandwich with a baked egg dish, providing a delightful twist to the traditional breakfast spread. This tantalizing strata boasts mouthwatering layers of tantalizing turkey, and delectable Swiss cheese, all artfully melted between fluffy pieces of bread soaked in an indulgent egg and milk mixture.

Tater Tot Pizza Casserole
Tater Tot Pizza Casserole is a truly magnificent creation that effortlessly combines the flavors of two guilty pleasures in a very guilt free way. Pizza. And tater tots. It’s a kid friendly dish that adults are going to love as well. It’s lightened up by using a lean ground turkey meat in place of any sausage or standard ground beef. I also chose to add some turkey pepperoni to mine because they taste just as good as regular pepperoni but save some calories.
One of my favorite things about this casserole is that it’s super quick and easy to toss together, and could really be made ahead of time and just not baked until you’re ready for dinner. Of course, if you wanted to you could go with really any meat you wanted to here - Italian sausage, beef, turkey, etc. But, I was keeping it extra light this time!…

Since this is an older recipe, I decided to revisit it, and wouldn’t you know it? Not far off from Mother’s Day again. It’s a happy coincidence!…

Here it is, the easies and cheesiest of casseroles for dinner that you’ll ever make from scratch. This pasta dish starts out with veggies and a roux that quickly comes together as a cheese sauce that’s mixed up with chicken and pasta and baked to perfection.
I did the smart thing here and used up the odds and ends of leftover smaller pastas that I had on hand in my pantry. That included some wheat elbow noddles, regular mini shells, and also some veggie rotini. So if you’re looking for a way to use up the ends of boxes of pasta, this is for you!…

Huevos Rancheros is a traditional Texmex dish that’s usually served for breakfast or brunch… or maybe even lunch. It’s a little bit like a breakfast taco in that it involves tortillas and eggs, but it also usually has ranchero sauce and beans too. This morning I decided to make it into a casserole instead, and let me just say… it was the right decision!
This breakfast casserole takes the breakfast or brunch game to the next level. Plus, if you make the sauce ahead of time, like I did, it’s super quick and easy to toss the casserole together. The ranchero sauce, while it’s homemade, is really easy to make too and only takes ten minutes to cook up…
