Skinny Biscuits & Gravy Cups

July 16, 2021 Amanda Plott

Biscuits and gravy cups? That’s right! Biscuit dough cups that are filled with an easy to make homemade sausage gravy that makes it all perfectly grab-and-go friendly while also being great for the kiddos! While these Skinny Biscuits & Gravy Cups are cute and even impressive, they are actually really simple and easy to make with just a handful of ingredients.

Since there isn’t a whole lot you can do to lighten up this biscuit part (outside of making your own biscuit dough), I did just about everything I could to make the gravy better-for-you. I started the gravy off with a lean turkey breakfast sausage and then swapped in almond milk for regular milk. I also used a reduced fat cheddar in place of regular…

This morning I decided to take the tortilla wrap trend to the next level with this pesto-goodness loaded breakfast wrap! This tortilla trend has just about a little of everything. Fresh veggies, pesto, cheese, bacon, and of course egg!

It’s delicious and takes just a few minutes to toss together. Plus, being as it’s a tortilla trend, it’s completely portable and makes for the BEST grab-and-go breakfast you can get your hands on. And with just a few simple swaps, this breakfast is completely guilt-free…

Skinny Instant Pot Corndogs

May 22, 2021 Amanda Plott

I’ve definitely done some baking in my Instant Pot. Oh, yeah. Did you know that you could bake in a pressure cooker? I didn’t for the longest time, but once I learned that it was a thing, I was in it for the long haul. These Skinny Instant Pot Corndogs are super fast to whip up and only take about 9 minutes in the pressure cooker to… bake!

These fun corndog bites are something kids and adults will both enjoy! Plus, they’re lightened up and just over 100 calories in one. Compare that to other corndogs out there, especially fried ones, and you’ll realize pretty quickly just how light these are…

Leftover Turkey Stew

November 30, 2019 Amanda Plott

It’s hard to know exactly what to do with leftover Turkey after Thanksgiving. I’ve made soups, dumplings, and a few other things in the past. This time though, I thought I would try my hand at making a sort of stew. It was surprisingly cold here on Thanksgiving this year, which is pretty strange. The past few years, we’ve had a super sunny Thanksgiving with a high of something near 80 degrees.

This year, we were in the 50’s, it was over cast, and misty. Normally I would say it was a ‘yucky’ day, but I always enjoy cool weather on the holidays that keeps everyone indoors and cozied up together. You know, encourages us to spend family time together. With it being chilly, I thought a stick-to-the-ribs hearty stew would be the best option for turkey usage!…

Taco Salad Splits

November 12, 2019 Amanda Plott

It’s cold outside! It’s so cold and frosty that school was delayed, and while it’s cold and not much else to do, my creative juices always kick into high gear. Today I decided to make some cute Taco Salad Splits with the bonus time that I had gifted to me by the weather.

So what’s a Taco Salad Split? Well, it’s a taco take on a banana split. Don’t worry, I’m not making tacos with bananas. But I am making these taco salads LOOK like banana splits.

This is probably the cutest way possible to make and eat your taco salad by the way…

Skinny Turkey Taco Breakfast Bowl

August 28, 2019 Amanda Plott

Good morning sunshine!

Who wants a breakfast that's full of protein, under 300 calories, and gluten-free? This girl! This lean breakfast bowl is full of flavor, easy to toss together, and can even be made ahead for up to 4 days at a time; saving you time and calories.

I know when I was first introduced to the idea of a breakfast bowl with rice and turkey, I was a little skeptical. I've never had rice for breakfast, unless it was in the form of a 'rice cereal' or sweet 'breakfast rice'. It was a notion that I quickly threw out the window this week...
