As we get closer to my all time favorite month of October, I naturally start to gravitate towards beer-centric recipes. I guess it has something to do with Oktoberfest, that or there tends to be more pumpkin spice beers readily available, and those are super fun to play with in the kitchen.

This week we’re finally going ‘back to school’. I made the tough decision to start my little one with learning online at least for the first week, and maybe even on to the first semester. There is no other reason than the fact that I work from home myself and have for years, so the idea of her doing school online here at the start, isn’t really such a ‘big deal’. 'Everything' Salad

This 'Everything' Salad is just that, everything. It’s based off the famous ‘'Everything' bagels that are known for their ‘everything’ seasoning that you can now buy at just about any grocery store. While I’m not generally a fan of croutons, I decided to grab some of the bagels and use them to make croutons for the salad. That paired with a homemade dijon dressing and some cream cheese makes for one great salad.

I decided to leave this salad meatless, making it a great option for a meatless Monday meal, but feel free to add some chicken or whatever other protein you might enjoy to the salad. This salad would also be great for a meal prep lunch box. Make it ahead of time and enjoy through the week!…

Lunch is served! This Thai Chicken Wrap is as simple as it comes. A simple lavash pita bread wrapping cabbage, carrot, peanuts, and chicken! There isn’t much here to lighten up since all of the ingredients are already fairly clean and simple. And this Thai Chicken Wrap must absolutely be served with a Thai Peanut Dressing for dipping.

The sauce is pretty much what makes this wrap ‘Thai chicken’. But, if you aren’t a fan of Thai peanut sauce then you are more than welcome to try any other number of dipping sauces that you enjoy instead. This wrap is super easy though and perfect PERFECT for meal prepping lunches for the week…

Sun-Dried Tomato Chicken Pesto Wrap

If you’re looking for some lunch time inspiration, here you go! This Sun-Dried Tomato Chicken Pesto Wrap is super quick and easy to make with just a handful in ingredients and a ton of flavor. When I got my hands on the sun-dried tomato tortilla wraps, I thought it would be fun to use them to make a ‘caprese style’ twist on a wrap with them.

So I loaded them up with two different kinds of pesto, chicken, bacon, mozzarella, and baby spinach. That’s pretty much all there is to it! Roll it all up together and you’ve got one of the easiest and most tasty wraps you’ll ever come across.

I served my wraps with baked chips and some fresh veggies, but some fruit, soup, or even a salad would also be nice sides here.

If you’re making this head of time as a meal prep, there isn’t much you need to do any differently. Store in an air-tight container for up to 3-5 days until ready to enjoy.

Prep Time: 5 Minutes • Cook Time: 0 Hours

The Skinny:
Servings: 2 • Serving Size: 1/2 Wrap • Calories: 299 • Fat: 22 g • Saturated Fat: 7 g • Carb: 14 g • Fiber: 1 g • Protein: 12 g • Sugar: 3 g • Sodium: 573 mg

Ingredients:
• 1 (100 Cal.) Sun-Dried Tomato Wrap Tortilla
• 1 Tbsp. Pesto
• 4 Slices (1 Oz.) Deli Sliced Chicken
• 1 Tbsp. Sun-Dried Tomato Pesto
• 2 Slices Low Sodium Center Cut Bacon
• 1 Oz. Fresh Mozzarella Cheese
• 1 C. Fresh Baby Spinach

Directions:
Lay out the sun-dried tomato wrap and spread 1 tbsp. of pesto over the top of it.

Place the 1 oz. sliced chicken over the pesto and top with the 1/2 Tbsp. sun-dried tomato pesto.

Layer with the 2 slices of bacon and 1 oz. fresh mozzarella cheese.

Top it all off with 1 c. baby spinach.

Roll it up from one end to the other, cut in half, and serve right away or store in an air-tight container in the fridge for 3-5 days.
