Even with times as they are, the world keeps on turning and life continues! It seemed like the world slowed down there for a while, but now it feels like the pace of life and living is picking back up again. With the new school year and new way of schooling hot on our heels, I thought it would be a great time to start planning meals that are quick, easy, and made with just a handful of kitchen staples.
I’ve made strata before, but this one is super simple. All you need is 6 ingredients and a few minutes of hands on time. The fridge and the oven do everything else in between! This Easy Cheesy Spinach Strata can be put together ahead of time and then tossed into the oven to bake when you are ready to enjoy it. Plus, it’s one of those meals that’s good for any time of day; breakfast, lunch, or dinner!
With back-to-school coming up soon, I picked up some Sara Lee® White made with Whole Grain Bread at Walmart too. It’s perfect for lunch boxes and at home sandwiches. It has as much calcium as an 8 oz glass of milk! Plus it’s a good source of calcium. This one is my daughter’s favorite because it’s fluffy and delicious, and it’s one of my favorites for her because it has 9 grams of whole grains per 2 slices.

• 8 C. Cubed Sara Lee® 100% Whole Wheat Bread)
• 10 Oz. Frozen Chopped Spinach, Thawed & Squeezed Dry
• 8 Oz. Shredded Cheese
• 2 3/4 C. Unsweetened Almond Milk
• 6 Whole Large Eggs
• 6 Egg Whites
• Salt & Pepper to Taste
Directions:
Lightly coat the inside of a 13x9” baking dish with non-stick cooking spray and place about 1/3 of the cubed bread into the base of it.
Top the bread with 1/3 of the spinach, followed by 1/3 of the cheese.
Repeat this process for another 2 layers and set aside.
In a medium bowl, whisk together the 2 3/4 C. milk, 6 eggs, 6 egg whites, and salt & pepper.
Pour the egg mixture over the dish evenly, cover and place in the fridge overnight - or at least 8 hours.
Once done, preheat the oven to 350 degrees F. and place the dish into the oven to bake for 45-55 minutes or until starting to brown on the top.
Remove from the oven and allow to cool slightly before cutting evenly into 12 pieces.
Serve right away and enjoy!
