Pumpkin Oat Muffins

October 11, 2020 Amanda Plott
pumpkin-oat-muffins6.jpg

These Pumpkin Oat Muffins will blow your mind! there’s no flour used in these muffins. Meaning if you buy gluten-free oats, that makes these muffins gluten-free on top of already being vegetarian and dairy-free! One of the best parts is that these muffins are so easy to make.

A quick whir around a blender with the oats and a mix with wet ingredients and you’ve got yourself an easy peasy muffin batter! I topped these off with a touch of raw sugar to give a little added sweetness, but honestly these muffins are pretty stand alone…

Dairy-Free 'Brain' Cheese Ball

October 6, 2020 Amanda Plott

Halloween is coming! And I couldn’t be more excited. For a long time now, Halloween has been my most favorite holiday, but I’m having to make a few changes to my usual routine lately since we’ve got a sensitive stomach in the house. I bought a plastic brain mold at the end of last year with the intentions of using it for a few things. A brain cheese ball was at the top of the list!

With dairy-free being the name of the game, I set out to find a way to make a cheese ball dairy-free. And you know what? It’s way easier than you might think. There are a lot of options out there for dairy-free alternatives. All the way from milk, to cheese, and even cream cheese…

Black Burger Buns (Bread Machine)

Halloween is coming! I’m about to get my Halloween decorations down, the weather is turning cooler, and I couldn’t be more ready for the Fall. The world might be more crazy than ever, but I’m going to enjoy my favorite holiday this year, one way or another. Now… usually around this time of year I’m coming ip with all recipes pumpkin and Halloween inspired. This year? No different!

These Black Burger Buns are fairly easy to make with a bread machine. And their dark color makes them PERFECT for a Halloween inspired burger. I made ‘werewolf’ burgers in that they were mostly just neat colors that made me think of werewolves; black, purples, deep reds, etc…

Once more, I am forced to say... 'I'm sorry' and... 'you're welcome' in the same sentence.

Who says 'you can't have your cake and eat it too?' Not this girl.

If you haven't noticed yet... I am all  about sweets and treats. Eatings skinny and healthy doesn't mean things can't be fun or enjoyed!...

Skinny Pumpkin Spice Cinnamon Rolls

September 9, 2020 Amanda Plott

I clearly have an issue with cinnamon rolls... They are a weak point for me. Always have been, and always will be.

I've attempted to make cinnamon rolls without cake mix, but honestly, the come out so much more soft and fluffy with the addition. Plus, it allows for you to have some fun with all the flavors of cake mix that are offered! ...

One of my fall favorites is spice cake. And what better to use as a base for some pumpkin spice cinnamon rolls?

Cookie Monster Cake

June 23, 2020 Amanda Plott
cookie-monster-cake21.jpg

This cake isn’t your average cake. In fact, it’s one of the most decadent cakes I’ve ever eaten, much less made. Though there’s a few steps and ingredients to get through, I promise that this cake is worth every bit of it. Any time and effort put into this cake will melt away when you take your first bite of it. And being as I turned the ripe age of 35 this year, I thought I could use a little something extra on my special day.

This cake starts out using my recipe for ‘wacky cake’; meaning it’s made with no eggs, butter, or milk! The filling is a safe to eat edible version of chocolate chip cookie dough. I lightened both up by substituting most of the sugar for natural sweeteners (such as splenda, monk, etc.) Yep, even for the frosting!…
