Oh. My. Gosh. This Dark Chocolate 'Crazy Cake' is delicious, y’all! The first time I heard about ‘wacky cake’, I was more than a little skeptical. How can you make a good cake with no butter, eggs, or milk?! Well, as it turns out, there’s a couple of secrets to this cake that make it perfectly fluffy and delicious! In fact, it’s one of my favorite cakes. One of these simple swaps is using Mazola® Corn Oil in place of another oil or butter. I’ve been cooking and baking a lot more lately with corn oil. A clinical study showed Mazola Corn Oil reduces cholesterol 2x more than extra virgin olive oil. To learn more about this claim, see MAZOLA.com.
I wasn’t done there though. I also swapped out some of the sugar for a natural sweetener, and the cocoa powder for a dark chocolate cocoa powder. The end result was this tasty and easy cake that’s made all in ONE dish. Yep. No bowls to clean. No beaters to clean…

Alright so… bare with me here. I know that chocolate isn’t the most healthy thing out there but, Halloween is just around the corner and as I like to say ‘everything in moderation’. Plus, we’re using some dark chocolate here so… that’s more healthy than other options, right? The truth is, I’m a firm believer in allowing yourself some treats here and there to keep yourself sane and from making worse decisions later.
So to make this bark a little more guilt-free, I decided to start it off with some dark chocolate. It’s my excuse for any kind of chocolate related candies or cakes. At least it has a few more health benefits than some of the other chocolates out there. That’s my story at least, and I’m sticking to it.

Spooky scary skeleton! … …I have no idea. It’s a song that my daughter sings. While these aren’t skeletons, or made of bones, these 'Tombstone' Pizza Pockets are super cute and rather easy to make too! What’s better is that YOU get to decide what goes in them and their shape - unlike those frozen-to-microwave ones. You know the ones I’m talking about. The ones filled with a bunch of scary sounding yuck.
These cute little pizza pockets are made with a whole wheat dough and are filled with the basics of any pepperoni pizza; sauce, cheese, and pepperoni! Yep. That’s basically it. A few traditional pizza favorites in a perfect and festive little pocket!…

Out of all the desserts out there, I would have to say that blondies would be one of my favorites! I think it has to do with them being the ‘vanilla’ version of brownies, which is also another favorite. I love that blondies are a more dense and decadent ‘cake’ that almost always involve white chocolate in them.
These 'One Pot' Skinny Pumpkin Blondies are no different, except that they have the flavors of Fall in them. Including pumpkin and plenty of cinnamon goodness, and a few other warm spices!

It’s no secret that Halloween my favorite holiday and I always like to do something a little special for it. My little girl is quite a pancake fiend. I would venture guess that she eats pancakes for breakfast just about every other morning. Except for Saturday; that is 'donut' day around here.
At any rate, with all the great pumpkin flavors going around this time of year, I thought it would be a great time to make a healthier pumpkin pancake!
No matter your age or pancake preference, these whole wheat pumpkin pancakes are a great way to start off any Fall morning! They are really easy to mix up and cook. Plus, they taste amazing with just a subtle hint of pumpkin and spice in there…

We’re finally in the 80’s around here, and I can feel Fall in the air just about. It’s one of my favorite times of year. Halloween is just around the corner and pumpkin spice is featured almost anywhere you look. Bring. It. On. I am so ready to get to use my stove and oven again without having to worry about spending the rest of the day cooling the house back off. The struggle is real, y’all.
Baking is not my favorite thing to do in the kitchen. It scares and intimidates me. And today was one of those reasons why. I turned my back for (what seemed like one second) and I over-beat my batter. Meaning my cake collapsed a bit in the middle. I was frustrated beyond belief with myself, but the family didn’t mind at all. In fact, they all said how good the cake was - even though I was mad at it…
