Spooky scary skeleton! … …I have no idea. It’s a song that my daughter sings. While these aren’t skeletons, or made of bones, these 'Tombstone' Pizza Pockets are super cute and rather easy to make too! What’s better is that YOU get to decide what goes in them and their shape - unlike those frozen-to-microwave ones. You know the ones I’m talking about. The ones filled with a bunch of scary sounding yuck.
These cute little pizza pockets are made with a whole wheat dough and are filled with the basics of any pepperoni pizza; sauce, cheese, and pepperoni! Yep. That’s basically it. A few traditional pizza favorites in a perfect and festive little pocket!
You can use a homemade dough, or one that you pick up from the store. For ease today, I went with a frozen one that I had on hand to thaw out. The same goes for the sauce! I prefer to make my own sauce, but one from a jar would work in a pinch! For the pepperoni, I went with turkey pepperoni, mostly because I just don’t notice the difference between it and traditional pepperoni and it’s a lot more lean!
I used this very cute Nordic Ware Tombstone Cakelets pan, but you could get away with almost any ‘6 segment’ pan if you really wanted. I know that Nordic Ware has a Haunted Skill Cakelet pan too that I’ve had my eye on for a while now.
The best part about these pizza pockets though, is that you can completely customize them to make them your own! Don’t like pepperoni? Swap it for sausage. Vegetarian? Use some cooked mushrooms! Add in olives, peppers, onions, etc!
My super picky little girl, who has never eaten a pizza pocket before, loved these. She’ll eat pizza all day long, but pizza pockets? Forget it! Until today that is.

• 14 Oz. Raw Uncooked Whole Wheat Pizza Dough
• 6 Tbsp. Pizza Sauce
• 12 Turkey Pepperoni Slices, Chopped
• 1 1/2 C. Pizza Blend Cheese
Directions:
Preheat the oven to 375 degrees F. and lightly coat the inside of your baking dish with non-stick baking spray; set aside.
On a lightly floured surface, roll the dough out and divide evenly into 6 pieces.
Place a piece of dough into each segment of the prepared baking pan and press down slightly to fit whatever shape pan you may have.
Spoon 1 Tbsp. of the pizza sauce into the middle of each dough section.
Fill each with pepperoni and about 2 Tbsp. cheese.
Fold the pizza dough over and pinch the ‘pockets’ closed to seal tightly.
Place the pan into the oven and bake for 15-20 minutes or until the dough is starting to brown on the edges.
Once done, remove from the oven and set aside to cool slightly.
Serve warm and enjoy right away!
