Oh. My. Gosh. This Dark Chocolate 'Crazy Cake' is delicious, y’all! The first time I heard about ‘wacky cake’, I was more than a little skeptical. How can you make a good cake with no butter, eggs, or milk?! Well, as it turns out, there’s a couple of secrets to this cake that make it perfectly fluffy and delicious! In fact, it’s one of my favorite cakes. One of these simple swaps is using Mazola® Corn Oil in place of another oil or butter. I’ve been cooking and baking a lot more lately with corn oil. I wasn’t done there though. I also swapped out some of the sugar for a natural sweetener, and the cocoa powder for a dark chocolate cocoa powder. The end result was this tasty and easy cake that’s made all in ONE dish. Yep. No bowls to clean. No beaters to clean.

• 1 1/2 C. All-Purpose Flour
• 3 Tbsp. Dark Unsweetened 100% Cocoa Powder
• 1/2 C. Sugar
• 1/2 C. Natural Sweetener
• 1 Tsp. Baking Soda
• 1/2 Tsp. Sea Salt
• 1 Tsp. White Vinegar
• 1 Tsp. Vanilla Extract
• 5 Tbsp. Mazola Corn Oil
• 1 C. Water
Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of an 8x8” or 9x9” baking dish with non-stick baking spray.
Place the 1 1/2 C. flour, 3 Tbsp. dark cocoa powder, 1/2 C. sugar, 1/2 C. natural sweetener, 1 Tsp. baking soda, and 1/2 Tsp. sea salt into the baking dish and mix it together until well blended.
Make three ‘wells’ in the dry mix, I made two smaller ones and one larger one.
Place 1 Tsp. white vinegar into one of the smaller wells, the 1 Tsp. vanilla into the other small well, and the 5 Tbsp. Mazola Corn Oil into the larger well.
Mazola Corn Oil has a smoke point higher than most cooking oils at 450°F and is perfect in many cooking applications, including stir-frying, sautéing, grilling and even baking.
Pour the 1 C. water over the top of it all and mix well.
Place the baking dish into the oven to bake for about 35 minutes or until an inserted toothpick comes out clean.
Once done, remove from the oven and allow to cool.
Top with your favorite frosting, if desired, and slice into 9 equal pieces before serving to enjoy!
