PBJ Brownies

July 31, 2020 Amanda Plott
pbj-brownies.jpg

I don’t know why, but I always go into peanut butter and jelly mode as the summer winds down and back-to-school starts to nip at our heels. What can I say? But, I’m sorry and you’re welcome. These PBJ Brownies are every bit as good as they look. They are the gooiest, most decadent, delicious brownies that I’ve ever had the pleasure of eating.

One of my favorite things about these brownies (other than how good they are) is that they are made all in one bowl. Which means they’re fairly easy to make and don’t require a lot of effort for being as amazing as they are…

Instant Pot Cold Start Vanilla Greek Yogurt

July 28, 2020 Amanda Plott
vanilla-greek-yogurt10.jpg

I never in a million years would have guessed that I would ever make yogurt. I don’t know why, but I just never really considered that I even could make it. Mostly because I honestly didn’t know the process of how to make yogurt. And… then I got a pressure cooker.

As it turns out, making yogurt is really easy to do. And what’s better? You can make it just the way you want, in any flavor you want, and as tangy as you want. Plus, making it yourself saves you calories AND money! So, as scary as the concept may seem, it’s definitely worth trying out!…

Peach Bundt Cake

July 24, 2020 Amanda Plott
peach-bundt-cake3.jpg

One of my favorite things about summer is peaches. I don’t know about anywhere else, but here in Texas locals come out in droves selling them at the side of the road. This year, I haven’t gone anywhere to see any. But, my local grocery store thankfully has ‘Texas Peaches’ on hand from local vendors so that I was more easily and safely able to get my peach fix this year.

This cake is truly one of the most moist and deliciously each cakes out there. The peach juices and fresh peach really take this simple and easy to make cake to the next level. It would be just as good as part of a breakfast or brunch, as it would be for dessert!…

Frozen S'more Bars

July 19, 2020 Amanda Plott
frozen-smores13.jpg

Look, it’s freakin’ hot out ya’ll. It’s so hot that even if I could make traditional s’mores, I don’t think I’d enjoy them quite the same. Eating hot food during the heat of the Texas summer just… isn’t the most novel idea. With that being said, I’ve had frozen hot chocolate before, so why not frozen s’mores?

These s’mores are every bit as delicious as traditional s’mores. That’s because they’re made with the same basic things, just with a few minor adjustments to be freezer fun and friendly…

Toaster Strudel

July 7, 2020 Amanda Plott
toaster-strudel15.jpg

One of my favorite breakfast bites growing up had to have been a toaster strudel. I guess there was just something about the flaky crust and the jam filling that would never get all the way hot in the very center. Being as I happened to have both some leftover jam and some puff pastry on hand, I thought I’d try making some homemade toaster strudels (and maybe even get the middle warm!)

These homemade Toaster Strudels are SUPER easy to make and are WAY more impressive than the delicious kid-friendly crap in a box. They are thick, fluffy, and full of whatever jam happens to be your favorite. Plus, they truly only take 30 minutes from start to finish. Well worth the time!…

Skinny S'more Bars

July 5, 2020 Amanda Plott
skinny-smore-bars3.jpg

Summer time to me means it’s time for campfires. Yeah, even if it’s pushing triple digits here, that’s just what you do in the summer. You camp, make fires, swim, and cook s’mores. It’s not always easy access to a fire though. Surely there has to be another way, right? Right!

These Skinny S'more Bars are… well, I’d say the next best thing, but… honestly? I liked them just as much as traditional s’mores. Plus, they’re perfect for a group in need of s’more goodness, especially for a group of kiddos since these s’mores don’t require a fire…
