Summer time to me means it’s time for campfires. Yeah, even if it’s pushing triple digits here, that’s just what you do in the summer. You camp, make fires, swim, and cook s’mores. It’s not always easy access to a fire though. Surely there has to be another way, right? Right!
These Skinny S'more Bars are… well, I’d say the next best thing, but… honestly? I liked them just as much as traditional s’mores. Plus, they’re perfect for a group in need of s’more goodness, especially for a group of kiddos since these s’mores don’t require a fire.
These Skinny S'more Bars start off with a graham cracker cookie crust that’s layered on the top and the bottom. Chocolate and marshmallow goodness is sandwiched between the two cookie crusts. I lightened the graham cookie crust by using a brown sugar/sweetener blend. If you can find it, reduced fat graham crackers would be great subbed in for regular grahams.
If it were me alone? I’d use a dark chocolate in these, but you could get as fancy or unfancy with the chocolate used here as you want. Today I went with simple and traditional. And yes, these Skinny S'more Bars are every bit as tasty and messy as any s’more and they couldn’t be more easy to make.

• 1/4 C. + 2 Tbsp. Packed Brown Sugar/Natural Sweetener Blend
• 1/2 C. Melted Butter
• 1 Whole Large Egg
• 1 Tsp. Vanilla Extract
• 1 1/4 C. Flour
• 1 C. Graham Cracker Crumbs
• 1/2 Tsp. Baking Powder
• 1/2 Tsp. Salt
• 4 (1.5 Oz.) Chocolate Bars
• 7 Oz. Marshmallow Creme
Directions:
Preheat the oven to 350 degrees F. and line a 8x8” or 9x9” baking dish with parchment paper.
Place the 1/4 C. + 2 Tbsp. brown sugar and 1/2 C. melted butter into the base of a stand mixer and beat at medium speed with the whisk attachment until smooth.
Add in the 1 egg and 1 Tsp. vanilla and mix until just combined.
Stir in 1 1/4 C. flour, 1 C. graham cracker crumbs, 1/2 Tsp. baking powder, and 1/2 Tsp. salt; again just until combined.
Scoop half of the dough out into the prepared baking dish and flatten it out to form what will be the top crust.
Carefully remove the parchment and ‘top crust’ from the baking dish.
Line the baking dish with another piece of parchment paper and scoop the remaining half of dough into the baking dish. Press it down to form the bottom crust.
Top the crust with the 4 chocolate bars, breaking pieces to fit accordingly as needed.
Scoop the 7 Oz. marshmallow creme on top of the chocolate and smooth to be an even layer.
Turn the parchment paper with the top crust over onto the marshmallow creme and remove the parchment.
Place the dish into the oven to bake for about 30 minutes or until the edges are browning.
Once done, remove from the oven and allow to cool completely.
If you prefer a s’more gooey s’more, slice into 9 bars and enjoy!
If you prefer a more solid s’more, chill for at least an hour in the fridge before slicing and enjoying!
