As American as apple pie…? I don’t know about you, but it’s been a good long while since I had an apple pie. Much less made one. And being as I’m Texas girl? I’ll stick with these Baked Caramel Apple Pie Taquitos!
Homemade apple pie filling is rolled up together with a creamy caramel filling and then dusted with cinnamon sugar for a perfectly simple take on apple pie, Tex-Mex style! These apple pie bites of goodness would be great as a part of breakfast (or brunch), or as dessert.
I lightened these up by subbing in natural sweeteners for most of the sugar. I also used a reduced fat cream cheese for part of the filling, but other than that, these taquitos pretty much stand on their own as they are.
Fresh apple slices and some more caramel on the side for dipping and dunking is a great idea too! I had thought about drizzling the caramel over the top but that would lead to some fairly sticky fingers in the process.

Apple Pie Filling:
• 2 Green Apples, Chopped
• 2 Tbsp. Butter
• 2 Tbsp. Sugar
• 1/2 Tsp. Cinnamon
Caramel Cream Cheese Filling:
• 4 Oz. Room Temperature Neufchâtel Cream Cheese
• 1/4 C. Caramel Sauce
Taquito:
• 1/3 C. Natural Sweetener
• 2 Tsp. Cinnamon
• 10 Flour Tortillas
• 2 Tbsp. Melted Butter
Directions:
Preheat the oven to 400 degrees F. and line a baking sheet with foil or a silicone mat for easy clean up.
Place the 2 chopped apples, 2 Tbsp. butter, 2 Tbsp. sugar, and 1/2 Tsp. cinnamon into a skillet and cook over a medium-high heat for 5-7 minutes. Set aside to cool.
In a medium, beat together the 4 oz. cream cheese and 1/4 C. caramel sauce together until smooth and creamy.
Mix together the 1/3 C. natural sweetener and 2 Tsp. cinnamon in a shallow bowl or plate; set aside.
Lay out a tortilla and spoon about 1 Tbsp. of the cream cheese filling onto the tortilla and spread over about half of it.
Scoop a spoonful of the apple pie filling over the cream cheese and roll it all up.
Brush with some of the melted butter and then roll through the cinnamon sweetener mixture to coat.
Set seam side down onto the prepared baking sheet and rinse and repeat for the remaining tortillas.
Place the baking sheet into the oven to bake for 10-15 minutes or until the edges are browning.
Once done, remove from the oven and serve right away to enjoy!
