One of my favorite breakfast bites growing up had to have been a toaster strudel. I guess there was just something about the flaky crust and the jam filling that would never get all the way hot in the very center. Being as I happened to have both some leftover jam and some puff pastry on hand, I thought I’d try making some homemade toaster strudels (and maybe even get the middle warm!)
These homemade Toaster Strudels are SUPER easy to make and are WAY more impressive than the delicious kid-friendly crap in a box. They are thick, fluffy, and full of whatever jam happens to be your favorite. Plus, they truly only take 30 minutes from start to finish. Well worth the time!
I lightened these Toaster Strudels up mostly by swapping the sugar for a sugar substitute in the frosting. A sugar-free or ‘no sugar added’ jam would be a great option too. Other than that, there really isn’t a whole lot to change about these simple to make breakfast pastries.
These Toaster Strudels are great for breakfast when served with a side of fresh fruit.

Strudel:
• 1 (17.5 Oz.) Box Puff Pastry Sheets
• 2/3 C. Berry Preserves
• 2 Tsp. Cornstarch
• 1 Whole Large Egg
• 1 Tbsp. Water
Icing:
• 1 1/2 Tbsp. Butter
• 1 C. Confectioners' Sugar Substitute
• 1 1/2 Tbsp. Unsweetened Almond Milk
• 1/4 Tsp. Vanilla Extract
• 1/8 Tsp. Almond Extract
Directions:
Preheat the oven to 400 degrees F. and line a baking sheet with foil, parchment paper, or a silicone baking mat; set aside.
Unroll the first sheet of puff pastry and cut into 6 equal rectangles.
Mix together the 2/3 C. preserves and 2 Tsp. cornstarch. (I used two different flavors of jam.)
Spoon 1 heaping Tbsp. of the jam into the center of each rectangle of puff pastry, leaving at least 1/2 inch around the edges.
In another small bowl, whisk together the egg and 1 Tbsp. water.
Brush some of the egg mixture around all edges of the rectangles.
Carefully unroll the second sheet of puff pastry and cut into 6 more equal rectangles.
Place one over each of the jam covered rectangles and pinch the edges together.
Transfer each toaster strudel to the baking sheet and brush the tops with the remaining egg wash.
Put the sheet in the oven to bake for 20 minutes.
Once done, remove from the oven and allow to cool for about 10 minutes.
While the strudels are cooling, whisk together all of the icing ingredients in a small bowl.
When the strudels are cool, drizzle the icing over the tops and enjoy!
